Description
On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

Tap at Beer Dock, Crewe Pours pretty much intense black with a small tan head. Malts and liquorice in the nose. Mouth is dominated dried fruits, with roasted malts and some chocolate. The finish is more bitter, with an alcoholic tinge. Rather nice.

Tried at the Nottingham Beer Festival 2019. Pale amber colour with a white head. Aroma and taste are malty light bitter, and fruity caramel. Medium body.

Cask @ Bailey Head. Pours dark, ruby hints, pale cream head. Good vibrant salted caramel on the nose. Thins a bit on the palate, light bodied, some mild chocolate, gentle roast, soft bitterness. Decent light milk stout.

On tap at Hops, Crewe. Nose has general maltiness with hints of herbs. Pours a slightly hazy red brown with a beige head. Mouthfeel is a heady combination of bready, creamy peppety malts, with chestnuts to the fore. General nuttiness in the finish. Would happily drink this one again.

Keg @ Bailey Head. Pours black with patchy beige foam atop. Aroma brings roast with light maple sweetness. Medium bodied, soft roast, teasing maple alongside a chocolate undercurrent, pecans just creeping in on the finish. Could be sweeter but on the whole it's well presented and a nice introduction to this brewery.

8/2/2019. Keg at Tom's Tap & Brewhouse, Crewe. Pours almost black with a small beige coloured head. Aroma of sweet young coconut milk and coconut husk, milk chocolate, bounty bar, caramel with light roasted malt. Medium plus sweetness, light roasted bitterness. Medium body, oily texture, soft carbonation. Slightly watery finish but otherwise very good.

8/2/2019. Keg at Tom's Tap & Brewhouse, Crewe. Pours almost black with a beige coloured head. Aroma of dark chocolate, deep roasted malt, ash, toffee, vanilla and black forest gateaux. Medium plus sweetness, moderate roasted bitterness. Full bodied, slick texture, very soft carbonation. Sweet finish with light toasting and a hint of tartness developing. Very good.

10/2/2019. Bottle from Tom's Tap and Brewhouse, Crewe. Poured black with a small beige head. Aroma of sweet malt, coffee, chocolate, coconut and light molasses. Medium to heavy sweetness, light bitterness. Medium to full bodied, slick texture, soft carbonation. Very good.
