Description
WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.

Bottle at RBSG. Pours a hazy gold with small white head that lasts. The aroma is tropical fruit and pine. Medium body, juicy hop, melon, pineapple, earth, grass, light bitterness, very good.

Tall can. Cloudy yellow with a white head. The aroma is light citrus and pineapple. The flavor is bitter pineapple grapefruit with some resin/\. Good, but not the best these folks have done.

Can from Craft Brewed. Pours a juicy, mango orange with a finger of foam that dissipates quickly. Dank pineapple and peach on the nose. Light on the palate but definitely Italy someboats in there. More dank citrus. Light and crushable. Very nice for a session.

Was curious how Bearded Iris would handle a session IPA, and the results are pretty much what I figured: giant, bursting, ruinous levels of juicy hops, tropical, peppery, vegetal, and dank, with no malts whatsoever to balance out the back end. Half a beer, with a mild, seltzery finish leading to a medicinal, slightly floral fade. Good texture, unbelievably hoppy nose, but a session IPA nonetheless.

Lord, I’m honestly worried I might be getting delicious DIPA fatigue from BI’s constant onslaught of good beer. Ever Clever strikes a lovely balance between a hazed juicy NEIPA and old school imperial IPA sweetness, with a lemondrop and caramel base offsetting the unrelenting tropical fruit hops. Berry, peaches, stonefruit, dank weed, lemons, oranges, bubblegum, green pepper, black pepper--all the usual hop suspects are here, but the malts add a firm sweet backbone, not as hefty as a Founders or Stone DIPA, but enough to keep Ever Clever from growing one-sided or too easygoing. Could use more bitterness, sure, but resinous IPAs aren’t Bearded Iris’s bag, so I won’t complain too much. Creamy texture keeps the alcohol hidden, and the massive tropical-citrus-weed nose proves irresistible. Tasty, tasty beer.

Can from Craft Brewed. Pours a hazy goldish orange with a finger of fluffy foam that lingers. Tons of mango and papaya on the nose with a touch of dank as it warms. Sweet on the palate with lots of pineapple and mango...a touch boozy though. Still solid stuff.

Can thanks to Rick. Pours golden with a nice tight white head. Smells like a citrus and tropical fruit hop bomb. Sweet sticky hops, plenty of fruitiness. Lingering bitters. Very flavorful.
