Description
WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.

Nice stuff here. Like a northeastern IPA. Hazy yellow pour thick with sediment like a river delta. Pine, mango and green onions. Tap at brewery.

Wonderful IPA. Hops so chunky they need a diet plan. Murky orange pour with good head and lacing. Pine mango and some green onion. Nice stuff. Tap at brewery.

Awesome beer. Hops fresher than Doug E. Candied apple, mango and a little pine. Hint of faint almonds. Hazy orange pour with great head and lacing. Very clean finish, almost empty. Tap at brewery.

Light citrus and some malt. Good balance and well suited for pub drinking in the land of the queen like ulsters. Clean finish, light bitter.

Decent stout but not quite A-team like Mr T as their hoppy beers. Light roast and very light caramel. Black pour with decent head and lacing. Bittersweet finish. Tap at brewery.

Thick, rich, massive IPA, bursting with pine and grapefruit hop loveliness, citric and bitter yet shored up by a hefty caramel-laced malt base. Starts with an unmistakable blast of Mosaic versatility, bitter and herbal and floral and fruity, then grows mildly sweet before the firm back end brings in some much-appreciated IBUs. Sexy pour, massive herb-grapefruit nose, and the ABV slips by undetected. Solid beer.

Tall can. Very cloudy yellow under a tall, tight white head. Reminiscent of what a Witbier often looks like. Aroma is full of fresh, bright grapefruit with a touch of fresh grass. The flavor is light smooth bitterness with a lot of juicy grapefruit flavor. Creamy smooth body. Long fruity, bitter finish.

Pours a lovely hazed amber-gold with a heavy foam ring on top. Aroma drips with grapefruit-lemonade hops and the slightest bit of boozy astringency. Tastes unexpectedly malt-heavy, putting forth a massive amount of caramel to shore up the insane levels of citric hop juiciness. Comes across with a orange roll sweetness followed up by a mild bitter finish, and the fade is all pine needles and boozy warmth. Which, unfortunately, means this beer feels a little harsh for an 8.2% ABV; a smoother back end might better accentuate the hops. Not perfect, but still an imminently drinkable Imperial IPA from Bearded Iris.
