In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.
Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.
A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

A hazed reddish brown saison with a thin moka head. In aroma, light cherries over nutty malts, light lactic points. In mouth, a smooth nutty malt with some curacao, fruity esters, herbaceous and smooth. On tap at Brewvival, Feb. 26 2011.

A copper orange ale with a thin off white head. In aroma, a nice fusel crayon, light salts, herbaceous and smooth, saison-like. In mouth,a smooth sweet fruity ester, with cloves, cardamom, caramel, quite nice and balanced, veering on belgian dubbel. On tap at Brewvival, Feb. 26 2011.

On tap at Mekong on 11/11/2010. Clear brown body with a small creamy off-white head. Sweet nutty and belgian spice aroma. Sweet nutty flavor with some caramel and belgian spice. Medium body with moderate carbonation.

On tap at Mekong on 11/11/2010. Hazy orange body with a small creamy white head. Sweet spicy herbal aroma with chamomile. Sweet spicy and herbal flavor with chamomile and citrus. Medium body with moderately high carbonation.

On tap at Mekong on 11/11/2010. Hazy dark brown body with a medium creamy tan head. Sweet spicy aroma with some chocolate molasses and floral hops. Big spicy flavor with some smoke character and roast, molasses and floral hops. Medium body with moderate carbonation.

Tap at tarrants on 03/22/2011. Dark black body with a medium creamy tan head. Dry spice and light roast aroma. Dry roast, spice, light fruit flavor with a dry bitter finish. Medium full body with moderately high carbonation. 8/5/8/3/15 - 3.9 On tap at Mekong on 11/11/2010. Dry hopped cask. Hazy dark black body with a small frothy off-white head. Sweet roast, chocolate and resiny hop aroma. Sweet roast and chocolate flavor with light floral/resiny hops. Medium body with moderate carbonation. 7/4/7/4/15 - 3.7

On tap. Pours with a large and foamy off white head over a hazed golden body. Aroma is peppery, grainy, and a bit of a citrus fruity note. Nearly a gooseberry aroma. Flavors of table sugar, fruity, orange, herbal and grape (reminds me of Nelson Sauvin). Lively bubbles and dry. Well put together saison.

Cask at Churchkey. Poured a dark brown color, medium sized tan/brown head. Aroma cocoa nibs notes, spices. Flavor roasted malts, chocolate, and caramel notes.

Bottle shared by someone at Paul and Ryan’s 5000th celebration, thanks! Poured a cloudy brown with a white head that slowly dissipated to the edges. Aroma had notes of dark grains and a bit of roast with some underlying light fruit and floral notes. Flavor began with dark grains, roast and a hint of smoke. The finish was a bit lighter with some light fruit and floral notes. An odd but interesting beer.
