Description
The Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference.These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence
-Built for posterity
-bottles are capable of decades of aging
-Acidic and complex (not basic.)

Bottled Jun 2, 2020. Pretty awesome kiwi fruity funk upfront and almost like a juniper finish. Gnarly flavors from just spruce but the base must be rye heavy? Whatever it is it's a great blend. -.20 rating cause the acidic finish is kicking my ass today.

Very nice aroma here. Cherry and light port. Nice balance here. A touch of vinegar. Ruby red pour without much head and lacing. Tangy tart finish. Tap at Dominion.

Bottle. Pours red. Funk, vanilla, cherry, sweet cherry juice, tartness, sweet barnyard funk balance. Medium body. Outstanding.

Draught at Tip Taproom, 1/13/22. Clear, cranberry-cherry-raspberry sort of red with no head. Beautiful, clear, authentic cherry in the nose outdoes the raspberry and there's balance from light oak/vanilla character, as well as a touch of grain/wheat. Sourness is moderate-to-light, with minor lactic acidity supporting the malic acid from the fruit. No alcohol or flaw noted. Soft and juicy fruitiness in the mouth with prominent cherry character. There's a strong, but not sweet or cheap/fake vanilla-like note that must be coming from the barrel? More tart than sour, very approachable with a lighter body, on account of its size, but still very flavorful and coming across very much lambic-like.

375 ml bottle from The Referend (NJ), before the PA move, 1/9/22. 2019 Release, bottled June 29, 2020. Clear reddish-pink. Thinner pink-beige head. Tart cherries dominate this one. Funk and earthy undertones. Solid flavor. Kind of one note, but not in a bad way, just hard to pick out much beyond all that cherry.

375 ml bottle from the Referend (NJ) before the PA move, 1/9/22. Bottled June 27, 2020. Murky pinkish-orange color, beige head. Nice mix of sweet strawberry, grass, tart / acidic flavors, and a little zesty citrus. The strawberry really shines here. Delicious.

375mL bottled June 29, 2020, drunk 1/9/2022. Clear, violet-tinged, raspberry/cherry-red with a small, violet/pink-tinted head that immediately runs to the edge. Beautiful cherry with a strong lactic edge to it and low malt/wheat character. Maybe a touch of acetic sharpness. Heavy fruitiness almost smells raspberry-like. Very jammy but also with a strong acidity. In the mouth it's just full-on, beautiful cherry meat/pulp with a lactic character that is refined and easily balancing. On the lighter side, body/texture-wise, especially for its near 7% abv. Incredibly tart/sour, yet not too much acetic character, thankfully. Cherries for days. Could stand a bit more malt/wheat texture, but you can't argue with the flavors they've created here.

375ml bottle pours a hazy, cherry red with some pink head. Nose is OK, apple juice and some lemon juice and cherry and cranberry. Flavor has more cranberry, blood orange or grapefruit, cherry, apple. Finishes tart, dry. Just a bit underwhelming.

Bottle pour at Tørst. Pours bright red. Blueberry, floral, funk, tart strong funk, red grape, heavy sweet fragrant berry notes. Good effervescence. Great.
