Description
he Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference. These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence
-Built for posterity
-bottles are capable of decades of aging
-Acidic and complex (not basic.)

Tangy tart plums, bit fresh in that I expected more funk but still tasty if only tart plum candy.

Bottle, 330 ml trade with nimbleprop. Shared with Max, Zec and Miro B at my 10k tasting. Hazy yellow orange with small white head. Funky, barnyard, stone fruit, bit citric, medium sourness. Juicy. Maybe lacking some depth, but still very good.

Bottle shared at the Beau in London tasting, last group tasting for 7 months - who knew, thanks to Leighton 11/03/20. Cherry red with a crimson cap. Nose is cherry skins, funk, tart berry fruits, damp straw, light acidic nostril tickle. Taste comprises cherry stones, funk, red berry compote, cherry sherbets, damp hay, barnyard twang. Full bodied, fine carbonation, semi drying close with a balanced puckering climax. Decent kit.
