Pigs Ear. Cask. Opaque dark brown beer, small pale tan head. Smooth dark chocolate, tangy and a little woody salty. Bubblegum esters not that sweet. Spicy finish. Pretty full on.

(Cask at Wenlock Arms, Hoxton, London, 26 May 2018) Amber colour with foamy, off-white head. Malty, fruity nose with caramel, dried apricots and prunes. Malty taste with notes of caramel, syrupy malt, dried fruit, prunes and a mild earthy bitterness in the finish. Light body, with a slight sweetness. Hardly exciting, but well balanced and drinkable bitter. Quite enjoyable.

5th December 2017
Pigs Ear. Cask. Clear brown beer, no head. Smooth dry palate, modest fine carbonation. Dry dark malts, some coffee tang. Mild dark fruits underneath. Light dry finish leaves a little roasty bitter linger. Okay, but nothing out the stout mass.

Cask at Pigs’ Ear 2017. It pours jet black with a medium white head. The aroma is earthy, toasty, rather savoury, charred wood, roasted malt, umami, dark chocolate and liquorice. The taste is dry, bitter, earthy, umami, savoury character, oily, peppery spice, touch of dried fruits and liquorice with a drying finish. Medium body and fine carbonation. Could almost be done with a bit more sweetness to balance it out. OK, but a bit too savoury in my opinion.
