Description
We are an independent micro-brewery that started brewing in 2012. Based in the picturesque town of Dolgellau our name is inspired by the dramatic Cader Idris Mountain which overlooks the town and the beautiful Mawddach estuary here in Snowdonia, North Wales.

Brewing by hand in small quantities using traditional methods, we combine the finest ingredients with the distinctive local Welsh Water to give to give each ale its own individual flavour and aromas.

Hand-pulled pint on 25th July 2017 at The Glengower Hotel in Aberystwyth. Light golden body, clean and clear: thin white head. Malty molasses rule the nose and taste with both caramel and toffee being the main aromas and flavours: not as sweet as it sounds though, some hop action helps to balance this malt centric brew.

500ml bottle @ Myrddin’s Bar Caffi, Barmouth. Pours reddish amber, small bubbly head. Aroma of light caramel malt, light spice. Taste is smooth, quite light, breezy malts, lightly spicy, earthy hops. No world-beater but served its purpose on this baking hot day.

500ml bottle @ Myrddin’s Bar Caffi, Barmouth. Pours a light amber, small white head. Aroma has distinct floral citrus, continuing to taste. Easy-going, but with more of a hop presence than I expected. Nice soft citrussy fruits, with a low bitterness and a great moreish quality. Did the job outside the caff on this balmy Summer’s evening.

500ml bottle from Moonshine & Fuggles beer shop, Ironbridge. Clear golden amber colour, white foamy head leaving lacing and aroma of malt, caramel, fruity hops. Taste is malt, caramel, toffee, mellow fruity hops and lingering earthy spicy bitterness. Smooth mouthfeel, medium bodied, soft to medium carbonation, dry tangy bitter finish. Nicely drinkable.

20th Nov 2015. First beer of the day in the UK Virtual Bar thread. 500ml bottle into a straight sided UK pint glass. Lovely autumnal orange body, clear and bright, on top a full white crown of foam. Really enjoying this as I do a live rate. Great blend of aromas and flavours with the hops just about coming out on top in both the nose and taste. Bitter, refreshing and easy to drink. Good stuff.

10th Oct 2015: 500ml bottle shared at home with MarcusM, the first beer in a random tasting evening. Poured a deep golden colour, the head a lasting white pillow. Malt lead in the nose and taste, semi-sweet with a honey hint within the flavours, mild citrus undertones also. Decent and a good start to the evening.

Cask (gravity) @ Nottingham Robin Hood Beer Festival (2014), Nottingham Castle, Nottingham, Nottinghamshire, England NG1 6EL. [ As Cader Gold ].ABV: 3.8%. Clear medium orange yellow color with a small to average, open and frothy - fizzy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, fruity malt. earthy malt, butterscotch. Flavor is moderate to light light heavy sweet and light light bitter with a long duration, fruity malt, malty, fruity, butterscotch. Body is medium, texture is oily to watery, carbonation is soft to flat. [20141008]

[ As Cader Red Bandit ].Clear medium yellow - amber orange color with a small to average, frothy - fizzy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, toasted - caramel, pale malt, apple. Flavor is moderate sweet and light moderate bitter with a average to long duration, earthy hops, pale malt. Body is medium, texture is oily to watery, carbonation is soft to flat. [20141008]

Bottle share round at Richy’s. Reddy amber. Off white head. Fruit. Sweet malts. Tastes pithy bitter. Has a spiciness to it. Pretty drinkable ESB.

27th June 2015: 500ml bottle taken by me to the 2nd Annual Midlands tasting, just to give everyone a new Welsh brewery tick. Split between 5, so we all had a decent amount to rate. Not as red as the bottle label would have you believe: it is light amber in colour, the head off-white, still looks OK though, even if it isn’t red. Malty lead in the nose and flavour with a red berry feel to both also, some herbal like spiciness runs through the brew too. Another decent beer to come out of Wales.
