Description
Bollhayes Cider was established in 1988 by Alex Hill and his late wife Bee. They planted their cider orchard then and now it produces most of the cider apples used in their ciders. To say that Alex Hill takes cider making seriously is something of an understatement. He has a scientist’s attention to cleanliness and detail; an artist’s search for the complexity, interest and truth from a palette of flavours, and these combine to produce prize winning ciders.

750ml wired cork bottle from the Cider Vault at Fram Ferment. Opened with a pop. Orangey amber gold colour, foamy off-white head that dissipates away and aroma of apple, ripe fruits, caramel hint. Taste is sweetish, apple, fruity, tangy, with some caramel hints, funk and drying spicy tannins. Medium bodied, medium carbonation, dry tannic finish. Nicely drinkable.

Bag-in-a-box at EBF Nov 23. Aroma has peel and tartness. Opaque chestnut. Frothy bubbly translucent off-white head. Watery. S9me sweetness. Peel bitterness. Then develops a dry streak. Light. Thin. Average carbonation. Long dry finish. Snooze. Not much to see here.

500ml bottle shared with Soph by the river. Clear golden orange appearance. Definitely gives dry first impressions with a marginally rough barky woody side, nice natural juice with soft tannins rounding things off. Very nice.

500ml bottle shared with Soph. Clear gold appearance. Thin bodied, watery, extremely oaky tannins, whisky barrel aftertaste.. very far from a demi-sec, not keeved. Bit weird this one, lacking a good fruitiness unfortunately.
