Description
Bollhayes Cider was established in 1988 by Alex Hill and his late wife Bee. They planted their cider orchard then and now it produces most of the cider apples used in their ciders. To say that Alex Hill takes cider making seriously is something of an understatement. He has a scientist’s attention to cleanliness and detail; an artist’s search for the complexity, interest and truth from a palette of flavours, and these combine to produce prize winning ciders.

Bag in a box from the Victoria Inn, Derby. Mid-golden, cloudy. No head. Aroma is intense with notea of overripe apples, earth, meat gravy. Sqeet/sour taste with an umami bite tou find in the beat ciders. M2dium body with no carbonation. Still as hell. This is a great cider.

Sample courtesy of Cheeseboard, cheers Simon! Golden colour, some short-lived bubbles on top and aroma of wood barrel, oak, apple, vanilla, formic, funk. Taste is sweet, appley, ripe fruity, some barnyard funk, woody, oaky, vanilla, with drying tannins. Medium bodied, low carbonation, dry woody funky tannic finish. Quite drinkable.

500 ml bottle from Darts Farm. Pours mid gold and flat. Aroma: apple, caramel, mild funk. Bittersweet apple, light tangy, low to mid tannins, dry finish. Light to medium body with no carbonation.

Sample courtesy of Grumbo, cheers Graham! Golden colour, no lasting head and aroma of mucky funk, apple. Taste is sweetish, tangy, appley, caramel hint, with barnyard funky notes, leathery, drying, and some soft tannins. Medium bodied, low carbonation, medium funky tannic finish. Nicely drinkable.

(Cask at Craft Beer Co Covent Garden, London, 1 June 2025) Golden colour, slightly hazy, with brief head. Fruity nose with green apples, apple skin, citrus and yeast. Fruity, tart taste with notes of green apples, apple skin, a touch of vinegar and generous tannins in a harsh, dry and tart finish. Medium body, dry. Bone dry with a generous acidity. Quite nice.

500ml bottle from Bristol Cider Shop. Sparkling, orange golden colour, white foam head that quickly dissipates to a thin rim and aroma of mucky funk. Taste is sweet, apple, farmyard funk, leather, wood, with bittersweet tannins. Medium bodied, spritzy carbonation, medium-dry funky tannic finish. Nicely drinkable.

BIAB at Somerset Country Cricket Club, Taunton. Pours clear pale gold, still with no head. Aroma: apple juice, apple skin, light caramel. Taste: light to moderate sweet, towards dry. Medium body with no carbonation. Enjoyed this.
