From my sake backlog. 350 ml bottle. Clear, pale straw-colored body. Aroma mild fruity, floral and some alcohol. Flavor is sweet fruity, slightly ripe fruity, rice, yeast and warming alcoholic. Medium to full body. Quite smooth and balanced between sweetness and alcohol, none of them really stands out. This might be a good introduction to sake beginners as myself.

From my sake backlog. 350 ml bottle. Clear, pale straw-colored body. Aroma is quite mild, but pleasant. Floral, rice and light fruity. Flavor has a mild fruitiness, slightly spicy and smooth alcoholic with a touch of fruity acidity. The alcohol is surprisingly well hidden. I think I could get used to this type of sake.

From my sake backlog. 750 ml bottle. Clear and almost a bit oily body. Aroma is fruity with raisin and not to dominating alcohol. Flavor is light citric fruity; some rise and quite mild on the alcohol. Medium body. Quite nice with good balance between sweetness and acidity. Nice but not outstanding.

From my sake backlog. 300 ml bottle. Clear, pale straw yellow with light oily body. Aroma is light acidic, rise, a hint of licorices and medicines. Flavor is quite alcoholic, fruity, rise and flower with a slightly harsh finish but not in a bad way. Medium body. Nice sake, but just a little bit too much alcohol flavor for my liking.

From my sake backlog. 300 ml bottle. Clear, pale yellow body. For me the aroma is just like water from boiling rice and quite strong alcohol fusel. Flavor is boiled rise water and alcohol as well. I had another sip the next morning, and might just sense a little hint of something between fruity and flower. I don’t know much about Sake, but I can’t believe this strong alcohol flavor make this one of the better samples. I’s simply too sharp on the alcohol. With the rest I just have to work my scores around middle as a I go on and learn more about this stuff.

From my sake backlog. 300 ml bottle. Clear body. Mild aroma of rice and fruit, hint of licorices and alcohol. Smooth, ripe fruity flavor with licorices and mild alcoholic finish. Body feels rich. One of the better Ginjo I have tasted.

From my sake backlog. 650 ml bottle. Clear and oily body with no carbonation. Aroma is like medicine, paint remover and alcohol. Flavor is mild rice water, sweet/bitter and alcohol with a hint of vinegar. Not particular pleasant.

From my sake backlog. Bottle. My second time ever to taste sake. This is really not enough experience to rate this, but you got to start somewhere. The body is pale and clear, I really can’t see anything wrong with this, but believe I should try to follow the more experienced rater and go for the more average 3-point appearance. The aroma is strong, first impression really reminds me about a bad moonshine experiment from the deep, dark woods of Norway. A little more detailed analysis of this is a distinctive alcohol flavor, alcohol with fusel. It could also give a feeling of sweet overcooked rice and old, wet, moldy newspapers. Flavor gives much the same impression as the aroma. Not a very pleasant experience but interesting. I really don’t know what you are expected to eat together with this, but we tried with some salmon, and the sake actually tasted better. Have to sample some other sakes later, particularly together with someone more experienced.

Backlog June 2009 (2004 vintage). Unclear orange body under an off-white head. Aroma is fruity, malty and spicy. Taste is sweet malt, dry fruit, alcohol and balanced bitterness. Medium body with a sweet and warm malty aftertaste.
