Appearance - 7 | Aroma - 7 | Flavor - 7 | Texture - 6 | Overall - 7.5
From my sake backlog. Small cup from Vinmonopolet. Clear pale golden without any head. Aroma is quite average for typical Junmai sake. Smooth rice, slightly citric fruity, hint of melon and moderate yeast impression. Taste in the same direction, soft and smooth rice, a bit of citric fruit, hint of melon and grapes, umami, not much yeast and some alcohol. Balanced body with moderate aftertaste. Decent and food friendly sake.

Bottle @ home. Slightly unclear deep amber body under a small beige head. Aroma is malty with bread, mild caramel, hint of dry fruit and red berries. Taste is balanced, sweet malt, bread, light caramel, red berries, just a faint hint of dry fruit, herbal yeast, moderate bitterness and well masked alcohol. Balanced body with a nice, malty aftertaste. Nice and somehow a bit complex, at least quite many flavors in taste. Not the most typical quad but not closer to anything else either. I was a bit surprised and found it difficult to rate the first bottle, but luckily, I had another. The second one where served a lot colder, about 6-8 degrees and I think that suits the beer best. Enjoyable.

From my sake backlog. Bottle. Unclear, pale milky body without any head. Relatively strong in aroma, rice, marzipan and alcohol. Taste is soft and smooth with rice, alcohol and hint of coconut. Quite pleasant and really smooth.

From my sake backlog. Bottle backlog April 2013. Clear like water with a slightly oily body. Light in aroma, slightly alcoholic with fusel, hint of yeast and almond. Nice but a bit weak. Taste is warming, mild alcohol, light rice, hint of citric fruit, yeast and rather distinct umami. Medium body and volatile aftertaste as it should be. Mild but pleasant tasting sake.

From my sake backlog. 350 ml bottle @ the brewery. Clear, pale yellow golden body with no head. Aroma is citric fruit, rice, fruity yeast and some alcohol. Flavor has lots of citric fruit, a hint of ripe fruit, rice and warming alcohol. Well balanced body and refreshing aftertaste with some alcohol. This one has the distinct Nøgne sake signature, but rather bold with quite much citric fruit and strong in alcohol without any lack of smoothness or balance. It simply very nice indeed and quite refreshing, but might give a slighter rough impression for the less experienced sake drinker.

From my sake backlog. 350 ml bottle. Clear yellow golden body without any head. Quite strong in aroma, ripe apple and pear with sake yeast, rise and a hint of plum in the background. The flavor is definitively sake but at the same time totally different to any other sake I have tasted. Quite sweet, apple, pear and rise like expected from aroma, umami and something toffee or caramel like in the background. Tried to pare this with different kind of food, but that’s difficult. My experience was definitively not fish, nor anything salt, difficult to find the right cheese as well, something sweet and fat seems to be the best but did not have any chocolate in the house. Totally unique experience for me and highly enjoyable.
