Using traditional methods our beers are brewed in small batches, and our Head Brewer Colin Williams oversees every aspect of the process. From the milling of the malt, the boiling of the hops, to the filling of the casks โ€“ everything is lovingly crafted to ensure that our beers reach you in perfect condition. Each beer recipe is known as the Grist. Colin and his team come up with the recipes, using over 20 years experience they work out the perfect blend of malts, hops and other ingredients. The night before a brew, the appropriate amount of malts are weighed out and loaded into the hopper of our vintage mill.

Cask at the Happy Man, Englefield Green, 18/06/13. Clear golden with a thin off white head. Nose is malt, bread dough, citrus, light hops. Tate comprises summer fruits, orange peel, touch of caramel, light biscuit, bread. Medium bodied with moderate carbonation, bitter notes in the finish. An adequate well balanced bitter.

Cask handpull at the Grape and Grain- Crystal Palace Spring Beer Festival, 2013. Dark brown pour with a reddish tint and a diminishing beige head. Dark fruit and raisin aroma. Flavours of prunes, raisins, toffee and licorice. Bitter-roast finish.

Cask at The Bell, Waltham St Lawrence. Bright copper with a ring of white head; malty aroma; simple malty flavour with a touch of farmyard; some roasted peanuts then contribute to the dry finish. An everyday bitter.

Cask at GBBF 2012, London. Pours dark brown with a creamy tan head. Burnt grass nose, some charred malts. Light to medium sweet flavor with burnt sugar and wood, some baking cocoa. Light bodied with fine carbonation. Dry finish with more baking cocoa, moderate roast, dry burnt wood. Good.

Hand-pulled half pint in The Crown Inn, Oakengates on 13 Nov 2012. Amber with an off-white head. Fruity aroma, with a mixed herb sort of smell as well. The beer is hoppy and fruity in the mouth with again those herbs in the background. Semi-sweet at first with a dry slightly bitter finish. Nothing special, but a decent enough beer.

GBBF. Opaque dark brown - black beer. Little tan head. Smooth dry palate. Tangy dark malts, stands out from the crowd by having well integrated mild coffee. Very subtle dark fruits. Lactose. Easy drinking.

Cask-conditioned at the Cornubia, Bristol 4/08/2012. Deep gold with a slight white head. Sweet, berry fruits and caramel, with a slight spicy edge and moderately bitter finish. Fine.

Tawny coloured body, off-white head: this was beer number 4 (all halves) at a beerfest in The George Inn, Eccleshall (April 2012). Gravity poured straight out the barrel: some hop smells but not a lot of anything in the nose really. Nicely balanced taste, the malts blend in well with the hop content and a mixed bag of summer fruits appear in the flavour: easy to drink and although it doesnโ€™t really test your tastebuds too greatly it is a fine bitter.

Cask, gravity at Cheltenham Town hall, Cheltenham, Glos weekend of Cheltenham Folk Festival Sat 11th Feb 2012 Golden in colour with a small white head. This is another beer that I get a rather strange flavour that I was not expecting, in this case a little frankfurter combines with this earthy, slightly hoppy reasonably bitter beer. Had two pints of this so it couldnโ€™t have been too bad. A6 A4 T7 P3 Ov13 3.3
