Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.

"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Beautiful, clean dark ruby, with large pink head. Tjis one is very lively, the carbonation is high; after a few minutes the aroma develops delicious notes of dark cherry and cellar; some funk, horseblanket. Dry, with sharp acidity; the cherry flavour is strong too; moderately astringent in the finish.
Clean, great.

Bright ruby red, mild aroma, not much Cantillon or Lambic character, subdued cherry too. Not feeling it.

2016-10-16, half bottle (cap and cork), vintage 2013 (bottled), 3 years old, 8-5-8-4-17=42
The aroma is not sharp, the cherry is dominating, with also cherry jam notes and cherry pits. Smooth mouthfeel, sour but not lemony or aggressive; strong cherry flavor, moderate Lambic character.
Powerful, and yet harmonious. Excellent.

Amber color with red hue; medium sized off-white head. The aroma, sharp, typical Cantillon, strikes immediately; fiercely lemony. Driest beer, combining it with astringency and high acidity; lemon flavor, without traces of cherries; there is an interesting nutty profile (hazelnuts?); the final is lean, astringent, sour, sharp.
Extreme experience.

The below sensorial experiences describe the beer as it was served in different locations (unfortunately missing Moeder Lambic St. Gilles in 2009). But it would not be enough to describe additional factors: it’s my beer to go when sitting at Moeder Lambic, it’s one of the most drinkable beers I know, it’s light and refreshing, it offers layers of complexity. As a Faro, it couldn’t get better.

The aroma seems to highlight cellar smells this time, cheesy, feety. The mouthfeel is smooth, the balance of sweetness and acidity (mild) is perfect, the cellar and Brett character is elegant and wonderful; there is a light touch of lemon; pleasant fruity astringency in the final. Excellent.

Cloudy dark amber color, with a giant creamy head. Aroma of malt, of old, maybe some dust, and brown sugar. Sweetish mouthfeel, but it doesn’t cover the character from the Gueuze. It’s not the first time I had a Faro at Moeder Lambic, and it’s always good.

2004-06-12, just prepared this morning by Jean at the brewery, with a 1½ year old lambic and sugar, 8-4-7-4-14=37
Hazy dark amber color. Nice aroma, reminiscent of vin cuit (apples and pears cooked for a looong time), and caramel. Very sweet, covering pretty much the sourness; easily (dangerously) drinkable!

Golden color. Classic, pungent aroma, cobwebs. Very smooth, still some residual sugars, more bitter than sour. Not as fruity as the Cognac version.

Hazy golden color. Delicate aroma, only lately shows some fruitness and cognac; pears and apricots in spirit. A real character, with very light wood notes, turning into a woody bitterness at the end; still some unfermented sugars.

Cloudy amber-red color. Aroma of raspberries, raspberry jam, some cellar, rubber, hint of petrol. Sour, fruity, raspberry character, some tannins.
Wonderful aroma.

Cloudy red color. Very nice, biting, fruity aroma (pungent). Absolutely sour, fruity, real raspberries. Excellent! Thanks Joris for sharing this bottle.

2011-09-23, draught at Moeder Lambic, Fontainas, 7-3-7-4-15=36
Cloudy burgundy red color, with too much carbonation initially, but no head after a short while. Aroma of country wine (rough), some vinegar, light cheese. Dry mouthfeel, very sour, with some red wine notes that are pleasant, and some late astringency. Interesting, although not very harmonious (maybe so is the kegged version).

2004-07-03, brewed 1995, bottled 1999, 9 years old, 8-4-8-4-16=40
Hazy copper color, poor head. Being 9 years old, the fruit character is almost gone, but the Lambic core is a real one, very aggressive, citrusy, tarty, woody; nevertheless it also shows a reasonably good malty line (more than usual); very long acid final.

Bottle: sampled at the brewery in Brussels. Poured a golden colored beer with great carbonation and a good head. Aroma is a mix between some floral tomes and the Cantillon yeast. Taste is a bit deceiving since it is too much acidic that it kills the rest of the flavours. I know this is supposed to be the classic gueuze but I believe that some other gueuze a better balanced then this one. Re-rate: Bottle dated 2004. Barnyard aroma with sourness and acidic notes quite evident. Taste is quite sour but not as acidic as the bottle tasted in Brussels which was probably fresher. This version seems to make more sense with ratings included here.

Red, bronwish body. Sweety aroma. Ligthly sweet, lightly sour initial flavour. A very soft mouthfeel (in contrast to most of the other Cantillin beers, which are quite ’offensive’ :))

1999 vintage 375mL bottle drank June 2004. Pours a yellowish-straw flecked with darker golds and some light coppers. Pretty nice looking with big hazy yellow/olive shades coming out when the yeast has been dumped in at the end. Obviously bottle conditioned. Small head, quite fizzy as usual. Smells magnificent, plenty of leathery tannins, lots of sharp white vinegar notes and of course some light grape hints. Moderate amount of funk. Flavor is wonderful for a gueuze. Though it’s made with fruit, this one does not overdo it (not that I was worried after trying their Kriek). Grapes add some extra sourness, some light vinous notes and a bigger tartness, but the gueuze is there; funky and yeasty. Very leathery, dry, tart and acidic. Didnt find this as funky and complex as the 98 kriek, but it was still an excellent experience.

Bottle at Brewtopia ’04 Another attempt to find a Lambic that I find enjoyable. This just didn’t do it either. The hazy yellow color gave way to the musty sour aroma and flavor that all Lambics have had. Definately an aquired taste. I will give one a try now and then, but for the most part, I will let you Lambic lovers have my share of these sour brews.
