Our farm is integral to our business. The ales and cider we brew and ferment in the converted shearing shed would be a different beast should we have chosen instead an inner city warehouse. The farm gives us a sense of place, connected to land and to ingredients we grow ourselves and source from other Tasmanian farmers too.
The old shearing shed was converted to house our brewery in 2008. The brewhouse itself was originally the St. Ives brewery in Battery Point, Hobart, installed back in the late 1980s. Rehoused on our farm, the old kettle & tanks are lovingly nurtured to life to help us on our journey to find a unique estate brewed beer.

375ml bottle from Bottleshop at Coogee beach. Golden colour, short-lived white foam head and aroma of tangy sour funk. Taste is apple, pineapple tropical fruity, fleshy, with some acetic funk, and drying acidity. Medium bodied, light carbonation, dry soured apple finish. Nicely drinkable.

Huon Wild Farmhouse Cider 7.5%
Lovely soft gold color with virtually no foam and a slightly tart sweet apple aroma. Quite dry with prickly carbonation. The taste isn’t so complex but it’s a nice clean wild cider.
Good stuff out of Australia.

Bottle at Spencer. Pours a clear gold with a white head that dissipates quickly and completely. Aroma has tart light fruits with a bit of funk, some leaves and a bit of oak coming through. Flavor has lots of oak and earthy leaves with growing tart fruits and a light funk.
The less than perfedt pour is operator error. It's not super saison-y, but the color, the smell: it's the beeryist beer I've ever had!

Pours murky pale brown with a small fading off-white head.Nose shows funk, honey, floral notes, gentle bready malt.Flavours include more funk, acidic tang, green apples, elderflower and a gentle bitterness.

On tap at Beer Deluxe Melbourne. Hazy gold, off-white head. Tart, vinous, oak, funk, nixe.

Poured from 750mL bottle. Cloudy yellow gold with small white head. Oak and tart funk, feint earthiness, decent.

750mL bottle. Pours cloudy brownish orange with small white head. Aroma has a lot of wild yeast, cloves, earthy fruit. Flavour is tart and earthy with floral notes; wild yeast funk, cloves, citrus. Nice wild ale.

Hazy, dullish amber. So it doesn't look great. There's a lot of bugs right up front on the aroma, and a lot of wood. It's got a soft malt character, with mellow bugs like brett c. A bit of leathery accent, and it has some good tannins in the finish. There's even some sweetness, so there's a really good balance and it has good complexity. I like the rusticity; it's on brand but lends this a certain uniqueness that lands well.
