Description
A blurry picture of a sweet little farmhouse popped up on their computer screen. They smiled. A few short weeks later Melanie and Jeremy White were standing at the bottom of a curving drive, somewhat stunned to realise they had just bought over 100 acres of pristine Cape Breton farmland. Perched on a southern slope facing the UNESCO Biosphere Reserve Bras D'Or Lake, a hopyard was planted, and the land was certified organic. Water naturally rich in minerals was perfect for brewing. Construction began.
Ten years later, Big Spruce Brewing is focused on creating exceptional ingredient-driven beer. All of our ales and lagers are brewed with organic grain & hops, and we continually strive to keep giving you the perfect pint, every time.

Sharp pine. Almost tastes more west cost than hazy. A little green onion, some bark. Hazy orange pour. Pretty bitter end for a can.

473mL can, pours a clear golden with a small white head. Aroma brings out grassiness, straw and biscuity malt. Flavour is bitter as fuck, with grassy hops, straw, and biscuity malt. Hoppy, bitter, grassy and well-constructed. Solid stuff.

22oz (thx, Ryan!) @ Salesforce. Appearance: hazy blonde with a white head. Aroma: dirty farmhouse notes, some smoky-ish and herbal and peppery notes. Reminds me Belgian classic saisons quite a lot. Taste: along the same lines, quite dry and bitter, feels like a bit thinner that the regular sasions. Overall: meh.

22 oz. bottle, pours a hazy blonde with a medium white head. Aroma has a nice spicy saison yeast, farmhouse funk, hay, and light pepper. Flavour has spicy saison yeast, white pepper, hay, and a touch of well-placed phenolic notes. This is a surprisingly authentic saison. Finishes spicy, rustic, dry, and pepper. Very good.

Poured from 650mL bottle. Hazy blonde gold with full white head. Very dry and peppery, bretty, feint lemon citrus. Quite nice.

330mL bottle. Pours very murky dark gold with small white head. Aroma has rum, gentle fruits, sweet malts. Flavour has sweet sugars, some acidity, stonefruit. This is weird and slightly unpleasant.

330ml (thx, Ryan!) @ Matt's house. Appearance: dirty hazy copper straw. Aroma: apple seeds, some fruity notes, some dirty fruity-veggie notes and a bit of tannins, oxydized. Taste: tart, good malt backnone, but other than that there is nothing good here, it's kinda harch and unbalanced. Overall: meh.

Murky and kind of a dull colour. Tart, the calvados seems to come through quite a bit here. What's the base - a sourish take on a biere de garde? This is an odd bit of a mess. Some brown sugar sweetness in the finish. It's not awful, but it's definitely a mess.
