A blurry picture of a sweet little farmhouse popped up on their computer screen. They smiled. A few short weeks later Melanie and Jeremy White were standing at the bottom of a curving drive, somewhat stunned to realise they had just bought over 100 acres of pristine Cape Breton farmland. Perched on a southern slope facing the UNESCO Biosphere Reserve Bras D'Or Lake, a hopyard was planted, and the land was certified organic. Water naturally rich in minerals was perfect for brewing. Construction began.

Ten years later, Big Spruce Brewing is focused on creating exceptional ingredient-driven beer. All of our ales and lagers are brewed with organic grain & hops, and we continually strive to keep giving you the perfect pint, every time.

330mL bottle, pours a cloudy dark orange with a small white head. Aroma is very oxidized, with old wood, musty earthiness, and some spirit. Flavour is sweet, almost syrupy, with tons of boozy brandy, some oxidation, butterscotch, apple seeds, and old wood. This is bizarre. It's difficult to say this is good, as there is so much odd about this. Ultimately, this is just incompetent.

473mL can, pours a hazy pale golden blonde with a medium white head. Aroma has some white pepper, some rustic farmhouse notes, and a touch of floral notes. Flavour is on the drier side, with floral, farmhouse notes, light white pepper, and a touch of rustic notes. Rustic, floral, dry enough on the finish. Not getting any elderflower. Very lightly estery. Good.

Poured from 330mL bottle (2021 vintage - side by side with glenora whiskey version). Very dark brown with minimal beige head. Dark fruits on the nose, rye whiskey showcased decently on the taste here. A touch more body compared to the glenora version.

Poured from 330mL bottle (2021 vintage - side by side with rye whiskey version). Very dark brown with minimal beige head. Dark fruit on the nose, sweet whiskey on the taste. Thin-medium body (rye whiskey version is a touch fuller).

16oz @ Ryan's (thx(?) for the beer, man!) shared with Brian and Phill. Appearance: brown with a beige head. Aroma: a bit of harsh wood, some grassy notes, a bit roasty. Taste: along the same lines, quite harsh, grassy, bitter. Overall: this is bad.

Poured from 473mL can (pkg 18/11/2022). Dark brown with small beige head. Harsh whiskey character, mild molasses, feint cookie character, hint of nutmeg and clove, the ginger and spruce is almost non-existent. Too thin bodied. Age probably lost some of the spices.
