Description
Shacksbury Cider makes dry, food friendly wild ciders in Vergennes, Vermont. We source over half of our apples from Sunrise Orchards in Vermont as well as old, abandoned orchards throughout the Champlain Valley. We also work with Dragon Orchard in England and Petritegi Sagardoa in Spain. Our fermentations are slow and deliberate. We rarely use added sulfites. We prefer native yeast / wild fermentations and bottle condition via methode ancestrale or methode champenoise whenever possible. At Shacksbury, we believe cider can, and should, be daring and complex. From gnarled trees on New England farmsteads to Old World orchards in England and Spain, our cider will change the way you think about this amazing fruit.

355ml can from Old Shoe Bar, Sheffield. As Classic Dry Cider 5.2%. Clear golden colour, some short-lived bubbles on top and aroma of apple, musty. Taste is tangy, apple, some flesh, fruity, oak & vanilla hint, slightly tart, and with mellow acidity. Medium bodied, light carbonation, dry finish. Quite drinkable.

Perfume, avon soap, apple. Clear yellow. Apple, perfume. Light body, easy carbonation. It's different, but I don't think I like it. Extremely soapy.

Honey color with a small soapy white head that faded quickly. Musty and dryish with grape and a hint of apple. Medium finish and body.

Single from City Swiggers. Pint glass @home. Nearly clear, just a touch of jelly, pale amber color; wispy thin froth. Smells of mellow whisky, brown sugar, candied ginger & Big Red-style cinnamon mulling up some sharp cider. Taste is bold orange & some vanilla upfront, gentle whiskey that comes off more like rum, tart-sharp apple middle, some warming candied ginger & red candy cinnamon on the tail. Crispy, not super carbed, acidic, pretty sweet, not too spiced, medium sulfites. There's some natural flavors in here, but all the spices are named, so it's probably apple essence in lieu of back-sweetening. Kinda good cider. Great seasonal.

Single from City Swiggers. Alan didn't recognize me, he seemed a little preoccupied. LaGuardia, a day to settle, Duvel glass @home. Murky, dark lemon black tea, lingering froth. Red grape skins, jammy black berry, I suspect back sweetening or natural flavors. Taste is more uniform. Still plenty jammy, but mellow skin, decent tartness, earthy sharp apples, weak lime, subtle sweetness, tea tannins, hard to find the sea salt, lingering Flinstone grape vitamins. Itchy texture, not enough carb. Tis just okay.

2015 bottle, 750ml format. Pours a murky gold. No head. Nose is apples and butter and a little malt. Flavor is apples and butter. Creamy finish. Malolactic ferm is clear. Nice.

355ml can from Stowe Public House & Bottle Shop. Bright golden yellow pour. Gin botanicals coming through on the nose alongside sweet apple fruit. Definitely a herbal side to it with a definite juniper berry influence. Clean, neat and sweet overall.
