Description
Jackalope Brewing Company was founded by Bailey Spaulding, the Chief Executive Officer of the brewery, and Robyn Virball. Bailey and Robyn became friends in September 2002 in the tiny Scottish village of St. Andrews, where Bailey was doing a semester abroad and Robyn was completing her undergraduate degree. After college, Bailey went off to Vanderbilt Law School, and Robyn entered the working world, but both thought they were looking for much bigger and more intoxicating things. Bailey’s passion for homebrewing led to the Jackalope dream, and in 2009 the ladies dove into planning the brewery.

In 2010, Jackalope was joined by Steve Wright. He started out as Jackalope’s biggest fan, parlayed that into being the first Jackalope intern, and is now a full partner and Chief Operating Officer of Jackalope. Everyone agreed that the focus was to build a craft brewery that put out delicious, creative beers while being an active force in the community. Jackalope opened the brewery doors on May 21st, 2011, and the Jackalope team has been working nonstop to accomplish those goals.

In 2013, Jackalope became the first Nashville craft brewery to can its beer. Robyn left the brewery in 2014 to pursue other interests, and Bailey, Steve, and the entire Jackalope team continue to grow our dream into what it is today. We distribute throughout Middle Tennessee, as well as Chattanooga and Memphis, and maintain our commitment to quality beer and community, all while having a little bit of fun.

Citric to the point of almost coming across like a sour, with a tart lemon-berry hop presence as the defining feature. Slight mineral-pine bitterness on the back end but the hops are all out of whack.

Doesn’t much resemble a kolsch taste-wise, instead offering up a whole lot of buttery diacetyl notes against grainy sweetness and a bready finish. Not good.

Mojito glass @home. Frothy, sticky, hazy honey tea gold.
Honey & pith, a little marzipan & veg on the nose.
Bittersweet, leaning astringent. Lots of lingering pine & bitter lettuce, bit of salt, Aspirin finish. Heavy body but ample carb.

Single from Nashville. Mojito glass at home. Canned 11/04/24, bought fresh, sat in the fridge forever.

Milky coffee cream head. Opaque, dark brown body. Drippy lace.
Heavy chocolate nose, cookie, secondary coffee, bready.
Bittersweet cocoa, wood chips, thin & astringent coffee, creamer, somewhat sharp, soapy bitterness, a little soot.
Strong carbonation, thin, sticky residual, mellow feels.

Kinda meh.

Tap. Medium brown with a white head. Had more maple aroma than flavor. Taste was a roasted, slightly nutty flavor with a light maple finish.

Can. Clear copper-orange in color with a medium sized head. Aroma was mild citrus and malty grains. Taste is very well balanced with a nice citus fruit finish.

Can. Reddish-amber in color with medium sized head. Aroma is bread, with hints of grass and citrus. Taste is oh so slight fruit with hints of roasted grains and citrus. Well balanced with no bitter finish.
