Sap House Meadery is a small producer of premium, hand-crafted meads (honey wines). The Meadery was founded in 2010 by two young entrepreneurs, Ash Fischbein and Matt Trahan. Together they rejuvenated an old store front in downtown Center Ossipee, New Hampshire using many recycled materials and sustainable methods. Sap House Meads use only time-tested traditional methods and procure ingredients from local farms and markets.
The signature of Sap House Meadery is its use of pure New Hampshire maple syrup in many of its meads. In some, such as the Hopped Blueberry or Cranberry Sage, it is used to add complexity. In the Sugar Maple however, it is the main ingredient with nearly half the fermentable sugars coming from maple syrup.
At Sap House Meadery we value community building and strive to source our ingredients locally. We are committed to creating a product that is steeped in history, produced naturally, and enjoyed universally. Our meads are created with a passion for the land and in homage to the bees that keep the land going. Bottle sample at Sap House, pours a clear dark red. Aroma is decadent, with intense port and rich raspberries. Flavour is wonderful, with loads of raspberries, light port barrels, and a touch of honey nectar. Loads of raspberries and just a touch of accentuation from the port. Delicious.

Bottle sample at Sap House, pours a clear pale yellow. Aroma brings out a lightly smoky whiskey and medium sweet honey. Flavour is along the same lines, with a really nice scotch barrel being expressed here, with medium peat, medium sweetness and intense booze. Very warming and hot on the finish. Good stuff.

Bottle sample at Sap House, pours a clear faded orange. Aroma is quite earthy and boozy, with spicy rye, booze, and honey nectar. Flavour is along the same lines, with lots of booze, earthy rye and sweet honey. Intensely boozy finish. Quite abrasive, but it's very nice.

Bottle sample at Sap House, pours a clear blonde. Aroma is very hot and abrasive, with subdued bourbon and light honey nectar. Flavour is quite boozy and abrasive, with every percentage point of alcohol showing and then some. There is some bourbon and sweet wildflower honey showing under there, but this is quite chaotic. Not so impressive.

Bottle sample at Sap House, pours a clear blonde. Aroma is very boozy, with lots of hot brandy barrels, medium sweetness, and some fusel alcohols. Flavour is more soothing, with lots of brandy barrels, treacle and medium sweet honey. Decadent and well-balanced. Very good.

Bottle sample at Sap House, pours a clear dull peach. Aroma brings out lots of red wine barrel accentuating the medium sweet wildflower honey. Flavour is quite dried out and earthy in a strange way, with a herbal honey character underneath. Boozy and abrasive. This isn't quite working for me.

Bottle sample at Sap House, pours a deep dark burgundy. Aroma is loaded with juicy raspberries, with subdued wildflower honey and moderate sweetness. Flavour is decadent, with lots of tart, sweet raspberries, alcohol and wildflower honey. Complex and deep. Very good.

Flavour is along the same lines, with heavy sweet wildflower honey, herbal notes, and heavy alcohol. Boozy and sweet. Not my thing.

Bottle sample at Sap House, pours a clear copper golden. Aroma is incredible, with rich vanilla beans and heavy honey nectar. Flavour is intense, with lots of alcohol, intense vanilla beans and heavy sweet honey nectar. The vanilla beans are amazingly decadent here. Phenomenal.
