Description
Holy Mountain is a brewery and taproom located in the Interbay neighborhood of Seattle, founded by co-owners Colin Lenfesty and Mike Murphy in 2014. The influence of oak has always been the focus of the majority of beers brewed at Holy Mountain. A sizable building near the Seattle waterfront has allowed the team to build a vast stock of oak barrels, puncheons, and foudres used for both primary fermentation as well as long-term aging.
The proximity of the brewery to the Yakima Valley also allows the team of brewers to utilize hops from the best producers in the world, constantly exploring the relationship between hops, oak, and mixed fermentation. Holy Mountain doesn't offer any year-round beers, which creates an ever-changing lineup in the brewery taproom. In addition to oak-influenced beers, Holy Mountain also offers a wide range of rotating, hop-forward ales and lagers.

Can from Tavour. Pours dark brown with a huge white head that did a Guinness. Then it turned foamy and persisted with some lacing. Aroma of somewhat toasty malt and some citrus Then earthy/Piney but not much resin. Malty but not sweet. The flavor is somewhat earthy, citrus and malt. Dark malt. good black IPA.

Can from Tavour. Pours slightly hazy gold with a huge white head that persisted. Medium body. The aroma through a huge white head seems to be peach and green onion. Juicy and not quite dry. It’s quite fruity. Flavor is something like dank, peach with citrus and notes of green onion. Very unusual for me – aMedium body. Very unusual for me. Sidenote the persistent head is now lacing down. Dank stone fruits works out fairly well.

Can from Tavour. Pours bright gold with a large foamy white head that persisted. Aroma is grainy/corny with Noble notes. Med body. It's fairly towards dry and a good dose of bitterness. Corny/grainy and grass/spice do the flavor for me. Slight hint of lime comes forth. Or maybe that's because I had limes with tacos yesterday. I do think it's really light lime tho.

Waxed, capped 500 from Tavour. Pours dark brn/blk with a slight but persistent dark tan head. Aroma of roasty malt and bourbon. Full bodied. Almost sticky maltiness. Somewhat balanced by heat, bourbon and possibly burnt malt. Flavor is somewhat sugary maple and pecans with heat, bourbon and roasty malt in support. Very nicely done. Heat does not detract. Wood can be found. Good stuff.

16 oz. can, pours a hazy yellow with a large white head. Nose is fairly restrained, with soft floral notes, some tepid juicy stone fruits, and a touch of citrus. Flavour is much the same, with a restrained hop expression that leans toward juicy, pithy stone fruits, very gentle floral notes, light bitterness, and an oaty, malty base. Not detecting a huge amount of characteristic hop expression. Reasonably constructed, just not particularly interesting.

Dark brown, with a fairly thick head. Big piney aroma, slight orange, dark malt. Very bitter, again with pine, citrus, bitter dark malt. Fantastic hop character, big dark malts. Intense - just the way this style should be.

473mL can. Pours black with a beige head. Tons of dry, almost ashy roasted malts and woody pine on the nose. Flavour has a rich and woody malt profile, great roast, gentle ash, and a dry, woody pine hop expression. Absolutely fantastic, this is a phenomenal black IPA.

On tap at Holy Mountain - Interbay, pours a clear pale golden with a small white head. Aroma has gentle grains, straw, and biscuity malt. Flavour has plenty of corn, with straw, toasted grains, and dry biscuity malt. Dry, clean, and eminently drinkable; not a hint of murkiness. As good as the style gets.
