About
Holy Mountain is a brewery and taproom located in the Interbay neighborhood of Seattle, founded by co-owners Colin Lenfesty and Mike Murphy in 2014. The influence of oak has always been the focus of the majority of beers brewed at Holy Mountain. A sizable building near the Seattle waterfront has allowed the team to build a vast stock of oak barrels, puncheons, and foudres used for both primary fermentation as well as long-term aging.
The proximity of the brewery to the Yakima Valley also allows the team of brewers to utilize hops from the best producers in the world, constantly exploring the relationship between hops, oak, and mixed fermentation. Holy Mountain doesn't offer any year-round beers, which creates an ever-changing lineup in the brewery taproom. In addition to oak-influenced beers, Holy Mountain also offers a wide range of rotating, hop-forward ales and lagers.

Undated can drunk 8/8/26.
Moderately-rich, buttery oak with soft vanilla and gentle caramel. They seemed to have matched the barrel treatment to the gravity, which is the biggest worry when barrel aging a, checks notes, 3% abv beer....Just a bit of pepper and spice from the bourbon, growing a bit more prominent as it warms/breathes. Basic mix of bread and caramel from the mix of base and caramel malts is amply supportive. No alcohol noted ;)
Earthy anise and vegetal flavors abound with massive umami. Tastes like chewing on a fresh bolete. Maybe you could make a case for it being tea-like, but I can't find the bourbon. Malts are thin, maybe not too thin for its size, but there are many more richer 3% beers out there. I realize this is the second runnings so it's unlikely to come off as deeply malty, and there's gonna be weird tannin and stuff, but I just can't get past the mushroomy umami (despite loving mushroomy umami flavors). Just not what I was expecting or wanted from a BA mild ale.

Can from Tavour. Pours light bright clear gold with a significant white head. Aroma of biscuit and a good dose of grass/spice. Arguably med body. Flavor is the aroma. It's dry crisp and bitter. Noble hops rule. Excellent.

Bottle. Pours clear golden, large white head, good lacing. Aroma is dusty, mineral, brett, lemon peel, more brett. Flavor is light sweet, medium brett funk, hay. Light body. Soft mouthfeel.

Capped 500 from Tavour. Pours light rose with a significant white head. Aroma is sour/tart/woody/raspberry. Med body. Sweet/tart/sour. Amazing that. Dry, astringent and raspberry. Brett is almost turned into fruit. Wonderful flavor.

Poured from 650mL bottle (2018 vintage). Very dark brown with very minimal beige head. Soft cardamom nose. Taste has light cardamom, feint perfumey note, hint of green pepper, bourbon, dark sugars. A little old, but still decent.

500mL bottle, pours black with a small tan head. Aroma still screams out tons of cardamom, with faded earthy coffee, and some earthiness—the barrels have faded. Flavour is smooth, with integrated coffee and cardamom, subdued bourbon, some gentle dark sugar, and soft roast. The cardamom has become subtler, and the bourbon barrels finish this off. Excellent.

500mL bottle [2018 vintage]. Pours black with a small tan head. Plenty of cardamom, some soft coffee, and bourbon barrels on the nose. Flavour has lots of thick dark sugars, coffee on the gentler side, cardamom, and some big boozy bourbon barrels. A bit hot on the finish. Bourbon barrels are very well incorporated with the base and the adjuncts; the cardamom has probably tempered well with age. This comes together very well.

16 oz. can, pours a cloudy dark orange amber with a small off-white head. Aroma has toffee, bready malt, and small hints of bourbon barrel. Flavour is sort of like a lightly bourbon-tinged English mild, with soft bready malt and essence of toffee. Decent enough for what it is.
