Description
Chimay is an authentic Trappist beer: this means that it is brewed within the walls of a Trappist monastery, under the control and responsibility of the community of monks, who are involved through the process of making and marketing the beer. Most of the income generated by this activity is devoted to the needs of the community and social works.

The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

Hazy orange with long-lasting foamy head. Aroma is hops, citron and yeast. Typical Belgium malt texture. Smooth mouthfeel with nice hoppy finish. I prefer Chimay Blue. (6/3/6/3/13 3.1)

Hazy orange with long-standing lace head. Aroma is malts, hops with citron. A bit Orval-like citric mouthfeel but not so spicey. Balanced, nice. (6/4/7/4/15 3.6)

Bottled
Dark brown raisin color. Brown creamy head. Aroma is parfume, yeast and apple. Mouthfeel is champagne-like: carbonated. Tasting raisins and prunes. Aftertaste is alcoholic bitter.

Bottle. Dark brown, with a slightly reddish hue that sports a big beige head. The aroma is of raisins, toasted malts, caramel, with a bit of plum. Bubbly, complex flavors that give that nice Belgian tang - caramel flavors mixed with fruit, roasted malts, and a slight banana. This is a very good beer - delicious.

Slightly cloudy, nice natural carbonation. Slight winey flavour/fruity taste. Lots of flavour. Strong yeasty flavour. Nice ale.

Pourred a very dark brew with a huge withe fluffy head and small bubble coming on top. This one has less of the sweeter taste then the red and more roastiness. This beer also has a firm body and the alcohol taste is not too distinct. The spice are very complex. This one is also a classic and never can get enough of.

Pourred a copperish brew with a nice big head. The head stayed on top for a long time. Very complex spice with a not too distinct alcohol taste. I would describe the taste as sweet with a light bitterness aftertaste. Very firm body. This is classic and can never get enough of this.

Not coming up with anything outstanding here. To me, this is just another run-of-the-mill Belgian. Pours dark red-brown, with overflowing carbonation (at first) that luckily subsided in short time to a slight tan head. Vinous notes on the aroma, as well as apple cider. Flavor was very similar, with yeast esters evident in the delicate banana flavors, which were complimented by strong vinous flavors and apple cider. Some dark fruit in the mix as well. Mouthfeel is too highly carbonated. I'm not especially fond of this beer.

Lovely light amber in color, moderate lacing of large bubbles - aroma of apricot and other fruits, as well as some yeastiness - subtle flavors of bread, fruits, and an almost artificial sweetness - finish is dry and crisp, with just a touch of bitterness - I still don't see what all the hype about Chimay is, but this is good beer.

An unclear dark orange beer with a fine but collapsing head. The aroma is sweet and pretty complex with notes of alcohol, wood, fruit, and metal. The flavor fruity with strong notes of plms, oranges, and coriander. The mouthfeel is very carbonated almost like a sodapop - and a little thin - especially compared to the ohter Chimays. A very fresh beer - this would make a great session beer if it was marketed.

(Draught) Amber-clear; white, creamy but small head. Grape-like nose, white-wineish. Sweet taste with herbal qualities. Bitterish "Belgian" type hops. No more fruity flavours, which I seem to remember. Retronasal a harsh metallic, stannum-like tang. If it weren't for the palate ruined by the metallic taste, medium to quite full bodied. Reasonably refreshing. The beer is quite good, not great. The finish is just awful. I'm pretty sure their modern brewing methods have partially ruined a once great classic.
