The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

A beutiful dark brown color. It has a light aroma of fruit and a good head. It has a slight aroma of hop bitternes. It is very drinkable but somewhat boring. If I could choose between this and Chimay Bleu I would never drink Chimay Rouge (and I very seldom do)

2001 version. I have been looking forward to trying this one for quite awhile (thanks Linc!). Definitely worth the wait. Chimay Red is a real letdown compared to this. This isn't the best beer I have ever had but it is definitely up there. I only wish I had a fancy goblet to drink these Belgian ales in. Healthy, lively head over an earthy dark brown beer. Fruit, caramel and toffee in the aroma. As with the Westy, the flavor seemed to morph as I drank it, something like liquid Grape Nuts. The flavor came out more and more as it warmed, so the beer got even better as I drank it. A true classic.

Rerate, 750 ml corked bottle, as Chimay Cinq Cents, Cardinal Pub & Bar, Stavanger. ABV is 8%. Some sediment in the bottle. Hazy golden colour, huge white head. Nice fruity, floral, yeasty and spicy aroma. The flavour is also fruity, yeasty and spicy (distinctly peppery, also nutmeg) with a hoppy bite in the finish. Very moreish. I’m upping it a point. Original rating: Peppery and spicy indeed, this is a beer out of the ordinary. The White is surely not a beer I regret sampling, but I’d prefer Chimay Blue by a mile.

Deep brown,Bread and gum flavors and perfectly balanced. I couldn't really taste any of the things M.Jackson writes about the beer, but it seems like he wrote about an aged version while mine scarcely was a year old - the other bottle gets a year or two in the basement :-)

Small bottle
Fruity (apricot) and spicy aroma. Orange chestnut, hard to avoid yeast clumps, big creamy head. Fruitbread base, raisins, citric freshness, a bit marzipan. Relatively light body, somewhat foamy mouthfeel. Sugary aftertaste. It is a really nice trippel - fresh and with a light body, but I don’t know, something was missing - mayby it was the small bottle

Redbrown and a nice head. light taste of strawberries and bananas and nearly perfectly balanced.

My first corked beer (I know, I know) and my second Belgian Ale. This blew the Witkap Pater out of the water (does that rhyme?) but I still feel it was lacking in some areas. Copper colored with an insanely thick head. Mellow fruit undertones are about all that stood out to me. I am looking forward to trying the Bleu.

Darkish brown. Pours thick. Fruity nose. Very malty, velvetty mouthfeel, some butterscotch and toffee. Late bittterness. Complex.
