The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

Old rating - A 330ml bottle brought some years ago in France & consumed at home, pouring into a tulip glass. Pours a dark brown colour with a white head. Aromas of malt & banana bread. Tastes of malt, banana bread, caramel, spice & earth. Smooth medium body with the alcohol noticeable. Mild bitterness on the finish. Outstanding.

Old rating - A 330ml bottle brought home from Belgium in 2015 and stored in my cellar. Opened on last Christmas day & poured a amber colour with a white head. Aromas are a combination of floral & grassy hops, sugar, malt and spicy yeast. The taste is sweet malt with some floral & grassy hops and mild bitterness. Medium bodied with effervescent carbonation and pleasant warmth near the finish. Very good

0,33 l bottle. BB 12/2027. Cloudy orange golden in the glass, nearly two finger white foamy head. Sweet fruity caramel aroma. Taste starts with a dry soft grainy bitterness, herbal spices, malt, sugar. Low carboanted. Soft alcoholic. Nice.
One of those beers that one sees in every beer shop and supermarket. Having said that a decent Belgian Tripel. Bottle at home.

Bottle. Dark brown with lasting tan head. Vanilla, lots of brandy, plums, oak, marzipan, light earthy, dried apple, raisins, leather, strawberries. Quite sweet, medium bitter. O er medium bodied. Quite nice, I've not been too impressed by most of the beers in this series but this is rich and sweet which works well.

F: big, tan, long lasting.
C: brown with red hue, clear.
A: rich malty, toffee, vinous, caramel, vanilla, figs, perfumed violet, banana, dried fruits, rum touch.
T: full malty base, caramel, mellow banana, warming alcohol, woody, violet, raisins, dried figs, bit woody vanilla, rum touch, medium carbonation, another nice Chimay BA I like this series yet may be not so complex as several years ago, fully enjoyed.

Bottle at home. 2009 bottle. A clear cola brown coloured pour with a fading tan head. Aroma is brown sugars, cola cubes, raisin loaf, white raisin. Flavour is composed of semi sweet, brown sugars, cola cubes, white raisin, Palate is semi, cola, oily, moderate fine carbonation. Interesting.
