Description
This Micro brewery opened in September 2004. It is a 5 barrel plant. The waters for making Cuillin ales are drawn from the river who's source is just above Coire a Bhasteir, the waters running down from the Cuillin gathering minerals and peat on their way to Sligachan where the slightly peated waters are used to give Cuillin beers their distinctive flavour and colouring.

On cask @ the Seumus Bar in the Sligachan Hotel. The pour is what you’d expect for a stout/mild - opaque black with a slight amount of fawn in the cream head. The nose is very dark chocolate, then very biscuity. The biscuits actually dominate the dark chocolate notes on the taste. The palate is medium bodied with a nice creamy texture and a fairly elegant clean finish. Overall, a well made mild.

On tap in the Seumas bar at the Sligachan Hotel. It pours pale and golden with a nicely proportioned head. The nose is fresh and grapefruity and this is confirmed on the taste. The palate is light to medium in body but well balanced and very drinkable.

In bottle in various places all over sky - the first was at the Claymore Restaurant in Broadford. This is a really well made amber/bitter - plenty of apple and toffee on nose and taste, good texture, nice refreshing finish. Truly a journey for the palate to experience.
