Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

One version of what seems to be a whole string of IPAs by this prominent French craft brewer, 75 cl bottle shared with Johan, coming from the pack sold at BXL Beerfest this year. Egg-white, mousy, large-bubbled, membrane-like lacing, stable head, misty straw blonde robe with ochre-ish tinge. Aroma of mango juice, lychee, lemon curd, yellow kiwi, sugared white yoghurt or cream, bread dough, papaja, green onion, chalk, fresh leek, starfruit. Juicy, fruity onset, sourish note, lime-like, but predominantly pineapple-, mango- and starfruit-coloured, fizzy carbonation, soft doughy-bready malt body with a soapy edge, quickly soaked in herbal, citric, mildly bittering hoppiness providing grapefruit peel- and slightly dried mango-like aromas retronasally. Strangely less abundantly aromatic retronasally than orthonasally (alas) and lacking a bit in end bitterness to provide structure to the finish, which as a result comes across as a little bit bland. Drinkable enough though, but France has produced better IPAs even in the new juicy and hazy idiom.

0,75l bottle at home. Bottled 02. August 2019, BB 02.02.2020. orange rather hazy color, medium big white head. smells earthy, lychee, spices, flowery, grassy, bit citric. nice smell. full body, soft carbonation. tastes citric, grassy, earthy, flowery, some stone fruits, peachy, bit herbal. finishes light to medium bitter with notes of peaches, flowery and some grassy notes. very good one, very nice to drink, more of a classical flavours profile, but very nice.

Tap at Moeder Lambic. Very tropical, mango and grapefruit aroma, pine too maybe. Taste is good. Little bit of body to it. Not so bitter, almost a little sweet. Nice. Low carbonation.

Bottle shared. Hazy light golden with white head. Soft pineapple, gooseberries, kiwi, starfruit, dry wheat, soft mineral and yeasty. Medium sweet and bitter. Medium bodied, slight watery and dry feel.
