Il y a encore quelques années, Michaël Novo construisait des installations chimiques pour un bureau d’études. A la nuit tombée, sa cuisine avait les allures de laboratoire. Il expérimentait des recettes. En 2009, l’idée de créer une brasserie artisanale germe dans sa tête. Un an plus tard, le 1er avril 2010, la Brasserie du Mont Salève ouvre ses portes.

From Tap. Fast schwarze Farbe, geringe braune Schaumkrone. Geruch röstmalzig, Gewürze, Kaffee. Geschmack sehr röstmalzig, Kaffee, Gewürze, Kräuter, interessant.

Trübes sehr dunkel orange goldenes Bier mit einer geringen beigen Schaumkrone. Geruch süß röstmalzig, Vanille, Kaffee. Geschmack süß röstmalzig, Kaffee, Lactose, Vanille, cremig.

Draught; Sample a bit tired No head left, brown-black beer. Sweet nose with wheat and lots of ureum, lactic acid, liquorice, condensed milk. Roasted, slightly smokey, ashes, yet sweet - lactose? Well-bodied, thick, but feeling lighter in the finish. Decent.

Draught No head left but dark beige rim, over black beer. Lavender, rosemary, liquorice and a bit of roast. Very (mountain?) herbal and even sweetish nose. Again lavender and other herbs (I did not know gentian was added, but it was exactly what I was thinking of, tasting). Sweet and roasted/burnt notes. Well-bodied, quite slick, long-lasting flavours. Decent, if not stellar stout.

330ml bottle from L’Abbaye des Saveurs, Lille. pours black, small tan head. Aroma is coffee roast. Taste is earthy roast, coffee grains, light saltiness, finishes dry. Enjoyable but flavours fade.

Very cloudy murky beige blond beer, small white head, unstable, bit adhesive. Aroma: very fruity, white grapes, some grapefruit, citrus. MF: ok carbon, medium body. Taste: bitter, bit cheesy, fruity notes, grapefruit, slightly sour. Aftertaste: very bitter, grapefruit, hoppy, bit grassy.

Dark brown to black beer, small creamy beige head, little stable, bit adhesive. Aroma: lots and lots of lavender, spicy and weird, caramel, some roast, sweet coffee. MF: lively carbon, medium body. Taste: very floral, spicy, lavender, weird, sourish, dark roast. Aftertaste: red currants, very fruity, nice roast, bit sourish. I can see how this will offset some people, but I can dig it. I have a long time relationship with Génépi, and a lot of both good and bad memories. :p

Clear very dark brown beer, small creamy beige to brown head, little stable, bit adhesive. Aroma: very roasted, sweet, some caramel, mocha. MF: ok carbon, medium to full body. Taste: coffee, lots of roasted malts, bitter, bit malty. Aftertaste: bit sourish, lots of roast, some charcoal, slightly sweet, mocha touch.

Draught Small pink head; clear, red to terracotta coloured beer. Faint fruity nose, and a slight bakery/oil nose, as from cake or frying oil. Very perfumey flavour, soup-y, berries. Tart, dry-out effect, excellent rince-palate. Good, if a tad (too) perfumey. Maybe a bit more fruit necessary?
