In 2020 after years of setbacks (the existing installations of the brewery turned out to be too old or too large; while co-investor Michel Simon left the firm) a new manager was appointed to put things in order. Brewmaster Jerôme, a medical biologist, keeps an eye on the fully automated brewing process.

Keg
Hazy dark amber color. Good mix of spices in the aroma. Malty, mellow, spicy, extreme Christmas beer, but very pleasant for me. Ends with chewy caramel and fudge as well.

Bottled. Cloudy dark brown, firm creamy head. Very herbal with lots of almond character and toffee. Sweet with soft mouthfeel. Flavourful with notes of spun sugar, fur needles and caramel. Low bitterness. Too sweet, but still very enjoyable with all the flavours it’s packed with.

Bottle, at Plan B, Copenhagen. Fine spicy and oaky aroma, vinous notes. Flavour is spicy and VERY sweet. Would go well with Christmas cakes, I guess.

Dark brown color with dog food and chocolate in the nose, which was surprising for a Belgian Ale. Rich, chocolatey smooooth mouth with fig, chocolate and snuff and a big dry malty chocolately finish.

[At Københavnske Øldage 2005] A hazy dark yellow beer with a small white head. The aroma is sweet with loads of cinnamon. The flavor is very sweet with cinnamon everywhere and a dry spicy end. Very Christmas like - or much like JensenTaster puts it, like drinking Bastogne cookies - I like Bastogne cookies and found this one surprisingly good.

[At Københavnske Øldage 2005] A hazy red-brown beer iwth a huge brown head. Both the aroma and flavor are sweet and very spicy, I can only pick out cinnamon, but there is much more I can’t put names on - but no matter it tastes good. The end is dry with a slight alcohol bite. A very pleasant surprise.

Draught. Unclear copper colour. Big, nice, creamy white head. Malty dried fruit flavour. Hint of sourness in aftertaste.

Draught. Bready aroma. Golden colour. Big, creamy white head. Mild spiciness, clove? Otherwise a little thin. Clove/bread aftertaste. The mouthfeel is quite creamy.

Bottle. Weak malt aroma. Dark golden colour, big creamy white head. Light malty flavour, some sweet fruit, with a hint of bitter aftertaste and some alcohol. Refreshing sourness. Creamy mouthfeel.

Brunkage aroma. Very sweet and brunkage flavour cookie... erm, beer. Will get too much very quickly.
