Bottle.

A- Pink color, clear liquid, light pink head.

A- Tart, oak, bright, cherry.

F- Acidic, tart, cherry, funky, oak.

T- Light body, average texture, medium high carbonation, tart finish.

O- No detectable bourbon barrel, just some generic oak. This was a year old. Could use a touch more cherry and definitely some bourbon influence. Rather sour and an average amount of funk. Good but not as complex as I'd hoped.

375mL bottled January, 2023, drunk January 1, 2026, as pictured.
Funk, earth, leather, deep, red berry. Really interesting and not leaning hard in the acidic or juicy direction, but just really funky, fruity, and earthy. Hint of oaky vanilla, with soft wheat help round the edges and temper the acid. Very clean, clear and highly aromatic, well-presented nose.
Same earthy, tart, tannic and berry-forward character from the nose. Almost hibiscus-like, with big notes of blueberry and juicy black raspberry. Soft oak with light vanilla notes and a soft, chewy, substantial body full of wheat and oak tannin for balance and depth. Juicy berries but very tart, tannic and peppery. Certainly no problem with too much sugar here. Funk is subtle and earthy and acidity is low-to-moderate. Beautiful stuff, as always, though maybe not quite as stunning and funky as some of the best in the series.

Nose is stone fruit, white pepper, a touch of clove, but no banana or bubble gum and the clove is super low. It's not as nuanced or flavorful as their normal Tripel, but obviously this one is highlighting the hops. Which are pretty much faded at this point, being almost 10 months old. That said, I don't think it would have been great fresh as there is quite a bit of phenol here, though no booze. Needed some time to round/soften. Lots of honey-like malt with some biscuity character too.
Similar flavor with rich honey and biscuit and lots of unripe stone fruit rind, unripe tropical fruit rind and white pepper. No banana no bubblegum, little clove. Doesn't have the roundness/softness/richness of their normal tripel. Maybe a bit given to hop bitterness which comes off grassy/floral, slightly herbal at this point. But still, all told it's a well-made tripel like few make any more.

0.355l bottle from Beer Republic. Aroma of wheat, flowers, grass and honey. Pours cloudy golden color with thin creamy off-white head and sparkling appearance. Taste starts refreshing grainy and yeasty, following is phenolic and grassy, mouthfeel is smooth with dry and bitter finish. Full body, creamy texture and average carbonation in palate. Long and strong…

16 oz. can. Aroma is soft roasted malt, chocolate, citrus peel. Flavor is a carbon copy. Lighter side of medium body. Perhaps a light bitter orange peel finish. It is decent.
