Spontaneous fermentation was on the beginning of beer history. It can be found in just a handful of breweries. This beer style is unique. Come and taste the forgotten flavors with us!

Wild Creatures is an experimental brewery from Mikulov, founded by Jitka Ilčíková. All their beers are fermented in a purely natural way, without the addition of yeast. Jitka gradually discovers the charms and insidiousness of wild spontaneous fermentation. Coming from a wine region and also having a small family winery, she can combine fermentation with different varieties of wine and other fruits to create imaginative taste creations that must find their way to your taste buds.

At first, the brewery produced beers for the foreign market and they collected awards around the world, and only with the advent of the pandemic did they think about production for the domestic market and started bottling in luxurious bottles.

Cloudy orange beer, small creamy white head, unstable, non adhesive. Aroma: a bit chemical, sourish, funky, weird, paint thinner, a bit harsh but also fruity, peaches, apricot, watery. MF: soft carbon, medium to light body. Taste: bitter, a bit watery, soft acidity. Not very good. Aftertaste: some tannins, funky, sour finish.

Hazy orangey. Quite funky, wheat, earthy, again a bit of herbal notes in the funk like thyme. Farmyard boogie. Medium bitter, lighter sour and sweet.

Pretty cloudy amber orange beer, creamy off-white head, unstable, non adhesive. Aroma: funky, wild, sourish impression, fruity, lemony, some apricot, white grapes, tannins, wood notes. MF: ok carbon, medium body. Taste: nice, gentle acidity, very fruity, lots of yellow summer fruits, juicy, citrus notes, tannins, a little bitter, some orange peel. Aftertaste: spicy, dry, sourish, lemon peel, juicy. Nice one!

Draught Says 2019, here. Huge white frothy head over clear light-copper beer. Soft pink fruit/ raspberry, grapes, rosé wine, and musk. Bit of frying oil, raspberry, green leaves, mushrooms, blank wood, apple. Light, but forced carbonation, faint slickness. Nice, but it seems a little bit tired. Nevertheless, great.

Draught 2020 Ed. Small rim, rosy-copper beer. Rosehips, vinous, rosé wine. Certain slickness hinted at in the nose. Again rosehips and rosepetals, diluted rosewater, faint fruitacidity. No slickness left, all in the lipsmacking acidity. Bit dry-out effect. Still a very good beer, though the Wildfire of the same year pleased me more.

Clear deep ruby to purple beer, no head. Aroma: funky, a bit of a sourish impression, red berries, a bit funky, quite some vinegar notes. MF: ok carbon, medium body. Taste: oh boy, wow, this is very bitter, unpleasant and medicinal kind of bitterness, mouth puckering and pretty bad, quite some tannins, man, I do not like this at all... Aftertaste: sourish, dry, spicy, earthy, some tobacco leaves and bitter still. What is this? Just the tannins from the grapes that make it so bitter?? Way too much for my liking.

Clear orange beer, small creamy white head, unstable, non adhesive. Aroma: orange peel, a bit oxidized, spicy, funky, sourish impression, clear brett notes, not bad! MF: ok carbon, medium body. Taste: clean acidity up front, refreshing, pretty hoppy and herbal, a bit soapy, fruity notes with hints of citrus fruits, peaches and apricots. Aftertaste: more acidity coming through, bett notes, rather herbal still, a bit woody, spices, coriander.

Draft @ Billie's Craft Beer Fest 2022. As Anno 2019.
Dorée/orange, léger pâle, col fin blanc.
Arôme sur un délicat fruité avec ce côté un peu fermenté, fruits rouges et baies en rétro je retrouve plus l'apport d'un blend en quasi présence d'un excellent lambic - comme quoi, il n'y a pas que en Belgique que cela peut se faire.

Palais présente une belle approche de la barrique, léger funk et effet 'sour' avec une petite douceur résiduelle rappelant les fruits et baies sauvages, amertume reste aussi présente avec une fine sécheresse en fin de bouche.
