Lightly cloudy, rusty-marigold. Light carbonation apparent.
Some initial bright, pungent pear is quickly joined by big oak and big acetic...
Sadly this one seems a bit too given to the acetic. Not that it's ruined or anything; far from it. But definitely stronger acetic presence than I'd want or that I'd assume they intended. Pear is interesting, still lightly juicy, though there's tons of dry oak character and tannin. Rich, chewy, soft, luxurious, but very acidic.

Dark magenta-cranberry. Light haze and well-carbobated.
Beautiful mix of mineral-rich, not-too-tanniv grape and softer, fruitier, more easygoing apple. Bright and aromatic with an almost herbal quality and light salinity.
Bright, tart, refreshing and balanced by soft oak and juicy apple. Mild Brett and plentiful grape complexity gives cranberry and chalky, high mineral Merlot suggestions. Good body but dry and refreshing.

2020 750mL bottle drunk 7/13/24. Clear brass with a bit of spritzy bubble in solution. Luscious, prominent apple nose with rich but mellowed sugars and very gentle malo-lactic acidity. Low oak. Incredible strength and clarity of aroma for 4 years old. In the mouth it's near-flawless. Just the right amount of sweetness and texture with hints of malo-lactic and oak character in the background for added depth. Soft, frizzante texture and a massive complexity of apple character.

750mL bottled 2020, drunk 6/22/24. Slowly gushing, clear brass. Well-carbonated. Small, white head to ring. Beautiful nose. Tons of botanicals with a lightly acidic, herbal, floral schisandra and tons of mellow brett. Gentle, lightly malo-lactic apples and a bit of sticky honey. Clean with no alcohol or weird phenols. Bright and juicy with spicy phenolics/acidity from the berries. Lean, long brett with a good texture and medium body. Good attenuation. Tons more brett and berry lingering. Refreshing and pretty light with big, bold flavors.

On tap at a stir (Capitol Cider), pours a clear bright golden with no head. Aroma has some perfumey, alcoholic notes upfront with subtle grape and apple skins. Flavour is astringent and chaotic, with lots of perfume, apple skins, oak barrels, and alcohol. Very harsh, alcoholic and perfumey. Something must've gone wrong in the fermentation here. It's not egregious, but it's far from well-calibrated.

750mL bottle, 2020-2021 vintage, drunk 2/24/24. Deep violet-purple-cranberry. Clear. Plentiful carbonation creating a pink head that rapidly fizzles to the edges. A big, rich, rather acidic mix of lactic and grape acidity. Cran-blueberry-grape notes with light wood tannin to slightly soften the force of the acidity. Very aromatic with juicy, tart, brett and malo-lactic apples on the end. Wow, this is way less acidic than I was expecting. Barrel character rounds and softens things with mild oak/wood tannin. A bit of smokey phenol throughout with rich red wine character and mild apple flesh with malo-lactic acidity being mellow and juicy throughout, with soft tartness. Tight carbonation, piquant sweetness, on the lighter side body-wise. Quite drinkable and approachable. The grapes grow a bit sweeter than I'd prefer, on the finish, as the bottle goes on. Very, very, very ambitious beverage and they've managed it quite well, though it still needs some work.

Slim 750ml bottle from the Press fan club. It has traveled a bit. Sensory-liked texture on the label itself. Two weeks in the fridge after a month in the dungeon. Mojito glass @home. Faintly cloudy, medium honey, dull, almost still. Earthy farm funk nose. Sweet, very brown apples, unintentional spice & fermenting hay stuffiness. Lots of fermenting hay & peach till it airs out. As it warms, it fumes appetizing spiced apple notes. Upfront green pepper twang, semi-sweet plum & cider vinegar, lemon rind, earthy, leather bittersweet snaps everything back, drier, tough of glue, herbal & softly sweet apple skin finish. Restrained funk & enough bittersweets is really the idea here. Moderately acidic but sweet enough, boozier than the list, dries out, just barely a whisper of carbonation. Very, very good.

Bottle shared in NH. Pours clear yellow-hold with a few bubbles on top. Lightly sweet, mellow funk, decent acidity, tart apples, low mustiness. Light to medium bodied with spritzy carbonation. Fairly clean finish, quenching acidity. Solid.
