Founded on July 1st 2016, Brouwerij De Feniks is all about Living your Passion (in our case : brewing the great beers we love and helping others do to the same) and keep doing what you love no matter what. As you only live once, you will find out at some point that it pays off on emotional/satisfaction and many other levels to follow your passion. Under adversity, if you stumble and fall, or even crash and burn, remember that you can Always rise from your ashes like the mythical Feniks bird as long as you keep believing and continue to live that passion... Straw blond with thin head. Really good level of farmhouse funk. Elements of fruity, young white wine. It's really fresh, sharp and has a genuine funky sourness.

Straw blond with light haze. Aroma is very much of a farmhouse with nice elements of straw and manure. It's a funky taste with the sweetness and sharpness associated with sherbert.

Bottle sample during Gents Bierfestival '21 - shared with Tderoeck.
Dorée-orange présentant un léger trouble, col fin blanc.
Arôme présente un nez répondant au nom - raisin et raisin avec des effluves 'sourish' , retrouve qcq pointes de barrique. Le tout conserve un léger funk plus sur un effet wild american ale.

Palais est finement 'sourish' avec un rétro raisin-fruité plaisant gardant une petite touche piquante en fin de bouche, côté raisin perdure tout le long avec un côté 'lambi-esque' tout en ayant ce côté 'sour' plus américaine - pas du tout surpris de retrouver le nom de Mikkeller dans cette histoire;

No head but ultra-small rim over fully hazy peach-coloured beer. Sour fruit nose, indeed grapes. Hint of white 'chocolate'. Sour, lactic and fruitacids, again definitely grapey. Bit vinous in character as well, much rather than lambic-like flavours. Lipsmacking acidity, light dry-out effect. New in the Feniks portfolio in many ways. I'm waiting for the Kortrijkse Quelque Chose...

21/VIII/21 - 75cl bottle @ Gents Bierfestival (Gent), BB: X/2025 (2021-907)

Cloudy beige beer, small creamy white head, little stable, non adhesive. Aroma: yeasty, little dirty, floral, soapy touch. MF: ok carbon, medium body. Taste: very yeasty, some tannins, bit fruity, nice acidity. Aftertaste: more yeast, somewhat bitter, tannins, fruity, ok, but I liked the base beer better.

Clear pale yellow beer, small creamy white head, little stable, non adhesive. Aroma: bit dirty, lots of sulphur, acidic impression, bit oxidized. MF: ok carbon, medium body. Taste: nice acidic start, lemony, fruity, more lemon, nice, some sulphur lingering in the back. Aftertaste: very sour, clean acidity, lemony, hint of vinegar, ok base beer.

Blonde beer by yet another self-proclaimed 'bierfirma' actually having their beer (only this one so far) brewed at De Feniks - I would not have acknowledged this company as an independent brewery entry here, but anyway. Refers to padel, a sport that - from what I have been told - holds the middle between tennis and squash, and has become remarkably popular in Belgium lately for some obscure reason. Thick, dense and foamy, egg-white, membrane-lacing head on a misty apricot blonde beer with ochre-ish tinge. Aroma initially dominated by sparkling water-like carbon dioxide, quickly making room for banana peel, oxidized old apple peel, peach, soggy sandwiches, coriander seed, parsnip, clove, dried orange zest, grass, chamomile. Estery fruitiness of banana (not 'bubblegummy' though), peach and pear, very sharp and lively carbonation, adding a sourish streak to an otherwise sweetish profile; soft and fluffy bread-pulpy maltiness with a very light toasty bread crust edge, phenolic spiciness on top combined with 'real' spiciness of coriander and curaçao but both remaining relatively restrained. Breadiness prevails, along with a very soft floral bitterness which nevertheless lasts for a while. Witbier-like in its spicing but more subtle (and not containing any wheat) - not unique among Belgian blondes by far, but still I think a bit more generosity in this spicing would have lifted up the flavours a bit. In this form: nothing wrong with it, but rather simple, bland and forgettable, to be honest. I guess this beer serves its purpose refreshing people after an exhausting game of padel - I'll never know.

33cl bottle from Prik & Tik Dranken Marlou. F: medium, tanned, good retention. C: dark, opaque. A: rich malty, dark fruits, bit chocolate, spicy, ginger, banana, bit dried fruits. T: full malty base, dark dried fruits, bit dates, spicy, herbal, cardamom, chocolate touch, bit warming alcohol, smooth mouthfeel, bit more spicy but good balanced for the style and enjoyable for sure.
