From growler pouring crystal clear copper with gold edges and modest white head. The aroma is big yummy citrus, some spicy hops and likely a light note of spicy hops mixing with sweet papaya. The taste is clean and refreshing with robust citrus and spicy hop flavor to go along with pine and resiny hop bitterness. I get a hint of tropical sweet fruitiness hidden underneath the sweet malts and citrus hops. If I didn’t know there was papaya in this I wouldn’t have every guessed. I get a touch of what seems like dry roastiness improving upon the refreshing quality of this beer. I would love to try it with more papaya contact time in the treatment. The way Wayne has modified his Jai Alai brewing process has paid off big. It is a delicious IPA.

From growler pouring copper with gold edges and modest white head. The aroma is full of sweet tropical fruit notes with lesser amounts of sharp citrus hops, spicy hops and a sweet malt backbone. The taste has a pleasing spicy to near pine to citrus hop bite quickly followed by late boil addition flavor hops and a thin layer of sweet tropical fruitiness. I have to say the last batch of Jai Alai was very good. The hops pop with bitter and flavor hop balance and are held up firmly by a sweet maltiness. This is the hoppiness I really enjoy. Excellent improvement here Wayne. I would be interested to see the Mango treatment with more contact time. As it is now the Jai Alai yumminess swallows up the Mango leaving only tasty hints here and there.

750mL pours brown with bright copper edges and thin tan head. The aroma is a bowl of pureed dark fruitiness, some sweet caramel, some molasses, a growing sweet chewy cherry candy sense as well as a touch of chocolate malts and roasty malts. The taste is smooth and nearly slick (watch your footing) as it begins with sweet malts, a touch of chocolate and roast and then it quickly picks up robust notes of prunes, raisins, orange wedges and grapefruit. Interesting. With all that is going on here this mix struggles a bit to pull together. As it hits a heretofore unknown luke warm temperature the chocolate and roasty goodness come forward and wraps this up into a pleasing medley of flavor notes. I look forward to trying this with some age on it.

Bottled@The Chriso Gaylord Tasting. Deep orangeish brown colour, mediumsized brown head. Aroma is funkyness, caramel, some wood as well as spices. Flavour is quite much the same in a nice balance. Quite interesting and rather different brew.

Bottled@The Chriso Gaylord Tasting. Excellent artwork! Quite much pitch black colour with small brown head. Aroma is toffee, alcohol, fruits, chocolate, mild fruityness and nuttyness as well. Flavour is coffee, fruits, liquorice, some alcohol and mild notes of wood as well. Just lovely!

Bottled@The Chriso Gaylord Tasting. Ambery colour, small beige head. Aroma is caramel, fruits, chocolate and some slight notes of alcohol as well. Flavour is gluelike sweetness along with chocolate, caramel malts, some fudgelike notes as well as some mild notes of nuttyness.

Taste: Smokey flavor with roasted malts, chocolate, alcohols, bitter hops
A very nice beer. This was the second time I’ve had this beer and enjoyed it both times.

Taste: Strong cedar at first, then roasted malts, dark fruits and chocolate
I was looking forward to tasting this beer with the cedar. I think that the cedar was a little to strong for me. But, I could just imagine how great it would taste while smoking a nice cigar.
