I have fond memories of this one from when I first encountered it last X-mas. Therefore I eagerly awaited this year’s release. Sampled from a very pretty 8.48 oz brown bottle this brew poured a hazy caramel color with a small tan head. The aroma was sweet apple, caramel and light spice. The flavor was sweet, malty and had a vague apple vinegar note followed by fairly strong caramel and faint dry spices. There is a strong resemblance to a hot caramel apple. There is a nice sharp fruity nature to this beer that is enticing. The finish is long and spicy. Fairly full bodied. The alcohol is remarkably well hidden. Excellent.

2024-08-23, I'm assuming vintage 2008, 16 years old, 7-5-8-4-16=40
This capped and corked bottle rested all these years on its side, in a proper cellar; the cork is in excellent conditions. Aroma of vanilla, and malt. I wish it had more depth, ut at least it's adjusting a bit, as it get's warmer; too much sugar in the ingredients; the barrel is very strong, for some reason I had 'cognac' in my head but I can't find it in the description; hot. Overall, it's a bit chaotic, but it's powerful, and it doesn't show signs of being 16 years old. Very good.

Clean amber colour with creamy head, beautiful. Strong aroma of oak, vanilla, and some dried fruits, candied fruits; interesting smoke note, leathery, but not oxidization. Bold and moderately sweet, it has a nice malt flavour, dried fruits; the alcohol is very well hidden; suddently there is a light note of Madeira, but that's it about the age; the lack of bitterness impacts the mouthfeel and finish though.
Still very enjoyable.

Hazy amber color, medium sized creamy head. Nice aroma of malt and cognac. Good body, sweet malt flavor, with a touch of vanilla, oak, fruits, raisins… Some alcohol warmth in the final.
Very good, after 4 years it seems at a good level of maturity.

Bush Millenium Cuvée 2000
2010-05-06, 11 years old, 8-4-8-4-16=40
Cloudy orange amber color. Aroma of malt, vanilla, a bit fruity. Good body; sweet malt flavor, good mix of vanilla and wood, with light fruit. The alcohol is more evident than it used to be, but it's still very good. A bit oxidised and corky.

the older bottles didn't have the vintage on the label; this bottle is about 5 years old (a good exercise in sight of the upcoming Bush Millennium tasting)

It pours a cloudy amber color; the initial head doesn't have much persistence. The aroma is incredibly fresh for this age, with vanilla oak in the front, malt and then light fruits. Good mouthfeel, sweet malt flavor, Bourbon vanilla and alcohol; it's like drinking a mix of malt and rhum. The beer is a bit cornered here, but this brewage is still valuable for the grace in holding up with the years.

Cloudy copper color. Strong aroma, malty and fruity (ripe apples), then caramel, wood and cognac (clearly the cask!).
Very good taste, malty, avoids with elegance all the possible mistakes: not too sweet, not too oily, not alcoholic, it makes you believe it's only 7% ABV! Again with evident cognac notes. Maybe, it's still not mature enough.
I love it, and it's very original, but must absolutely check how improves with the ageing.
Another point: it's a pity that the bottle doesn't have the vintage year.

Bush Millenium Cuvée 2000
2003-07-04, 4 years old=10-5-10-5-20=50
Cloudy orange to amber color. Original aroma, strong, curaçao, bitter oranges, harmonious wood.
Complex, lovely, incredible.
And an excellent body, with similar characteristics, cheating very well with the alcohol content: malt, hops, fruitness, Grand Marnier, alcohol, herbs…
Can this one be the best one I tasted out of 3000?

Golden body and big head. Rich and complex fruity aroma, but the flavour lacks and is mostly sweet and alcoholic.

Bottle. Malty, sweet, alcoholic aroma. Colour is dark brown, small white head. Quite dry bonbon/peppery flavour. Aftertaste has a nice dry bitterness and leaves a slight burning sensation, probably owing to the high ABV.

Bottled. Hazy reddish amber. Pours thick with no head. Complex aroma of oak, anise and cherries. Super rich soft, dense toffeeish malt dominates. Vinous. Despite it’s exceptional strength it stays reasonably dry. Salty, woody finish. It’s amazing how extremely well Dubuisson’s beer are suited for wood barrel aging. This is just fantastic!

Bottled. My official #3000 on RateBeer.
Hazy orange appearance. Lively, but with near no head, Rich aroma of malt, seville oranges and wood. More oaky than any other beer I've had. Firm and super malty with huge velvetty, filling mouthfeel. The woodyness dominates, but also improves the complex malt flavours. There is no hop flavour or bitterness to speak about. A big thanks to fiulijn for sharing this fine beer, to Bov for hospitality and many beers, and the rest of the Swiss elite beer drinkers for good company!

Caramel coloured body with a thin white head. Aroma of malt, coffee, caster sugar and a slight amount of hops. Medium-bodied; Light sweet flavours with vanilla and cinnamon. Overall, a nice beer and very welcoming, even in summer! I sampled this 25 cL bottle on 15-May-2004 at the May RB Party in Toronto, Ontario.

Frothy white head, fairly lacing and fully diminishing. Murky amber body. Bottle conditioned. Large particle sizes and a thick density of them. Yeasty aroma. Lightly sweet, moderately bitter, acitic initial flavour (slightly malty). Lightly bitter, acitic finish. Fully bodied. Moderately alcoholic finish.

Sampled at From The Vine beer tasting Jul 9th, 2004: Pours a clear golden orangle color with a thin white head. Decent lacing throughout. The aroma is very nice, a heady mixture of malt, honey and alcohol. Unfortunately the flavor doesn't come close to fulfilling the promise in the aroma. The body is carbonated with a rather Lager-ish character. Peppery alcohol and sweet caramel malt see-saw back and forth throughout. The finish is dry and lightly bitter. This beer was a bit of a letdown overall. Perhaps the (scalding?) alcohol content is to blame, but the beer seems unbalanced and is difficult to enjoy.

Apple peel and cherry aroma, some vinous notes and caramel. The body is a rather clear deep orange, topped by a minimal off-white head. I didn’t realize this was 12% ABV before reading this description, but now I do! The flavor is dominated by ethanol. I should save this and apply it to my next wound. Grape, apple peel, and sugars valiantly struggle to be counted in attendance, but, alas, their voices are too thin. There are much, much better high ABV Belgian beers out there...what’s the deal, Dubuisson?

2003 bottle. Pours a cloudy deep amber-red, mahogany and auburns in there. Good lasting white head. Smell is sharp, some citric notes, alcohol, lots of sweet caramel. Flavor is bold, assertive and strong. Lots of alcohol, dark, lush fruits reminding me of Abbaye Des Rocs Grand Cru, but a succulent caramel malt is felt in the middle, sweetening things up considerably. The finish does a 180 and dries out completely, getting moderately astringent, quite sharp and bitter. It really dosent need this much alcohol, though the complexity is nice, lots of esters, fruits, bananas, spices (cinnamon, clove). Pretty good stuff.
