Filosofie
In onze brouwerij gaat het in de eerste plaats om kwaliteit. Het is dan ook de bedoeling om hoogwaardige bieren aan te bieden die gebrouwen zijn in onze eigen brouwerij op basis van eigen recepten.
Dit kan enkel door gebruik te maken van de beste ingrediënten, kleinschalig te werken en vooral door onze jarenlange ervaring te combineren met heel veel enthousiasme.
Onze hop wordt geselecteerd samen met de hoppeboer op onze Belgische velden.

Hazy amber/golden colour, white foam. Sweet, lots of Belgian yeast, some banana, a bit citrussy, some herbal notes. Ok but nothing special.

Bière bouteille 33 cl. La mousse est abondante mais retombe vite. Nez sur la levure belge, pointe d'acidité. En bouche, un peu trop d'acidité à mon goût.

Blonde aromatized with jasmin, brewed at Fort Lapin for a hobby brewer (Bart Dewulf) going commercial under the name Hops Meet Friends; bottle from Restaurant-Traiteur Toulouse in Ghent. Gusher, foam bursting into a towering high, very bath foam-like, dense, egg-white, firmly remaining head; hazy yellow blonde robe with ochre-ish tinge. Aroma of halfripe banana, coriander seed, raw turnip, indeed a whiff of blossoms but more reminiscent of sweet melon and apple blossom than actual jasmin, old potato mash, green pear, honey, damp straw, minerals, vague touch cumin seed (probably just that jasmin again). Sweet onset, banana and pineapple ester with a touch of ripe pear, lively carbonated, supple body; pale malt-bready core, cereally, with some honeyish residual sweetness on top, finishing with powdery coriander seed effects and some grassy hops, along a hint of warming alcohol (very badly hidden at this modest ABV) and that blossomy effect of jasmin, again not very jasmin-like but more like sweet apple and something herbal. Nothing technically wrong here apart from the gushing perhaps, but again an utterly stereotypical blonde with a twist neither sophisticated nor strong enough to convince me. Rather boring, in all, and not my cup of (jasmin or other) tea...

Kerstbier Festival. Slightly hazy orange brown beer with a beige head. Aroma of dried dark fruits, raisins. Taste of raisins, dark fruits, caramel, berries.

Smell-weak yeast, weak banana, weak wheat. Foam- thin hops, bitter tones, weak wheat, weak yeast. Head is medium to large, white in color. Appearance- brewer bottle cap, simple label. Clear orange amber. From - snifter Taste - weak yeast, weak wheat, weak citrus, weak bitter tones. Nothing special.

A: clear dark golden, small, off-white head (?).
A: apple, coriander, soggy bread.
T: sweet apple, soapy coriander, wheat.
F: grassy hops, soap, soap.
P: medium body, slick texture, average carbonation.
Downright confusing: labeled as 'Rouge', described as 'amber' on their website, experienced as a soapy blonde. When you call it a Rouge, at least give me the red candy profile I oh so yearn for. You okay, Fort Lapin?

A 750 ml bottle that I have held back for several months, unusual because quads usually don’t last long around here. A globe glass catches the pour, a very dark body with amber at the edges and a frothy, light tan foam that has legs. I smell lots of ripe dark fruit and candi sugar. The taste is good but short of great. Plums, a touch of figs, grain, malt, some chewy leather and red cherries. It’s fine when I sample a new quadrupel, a nice rain shower at the new place too. Swell all the way around.

Rocky off white head on a murky brown body. Herbal, fruity & earthy aroma. Medium to thin bodied, softly carbonated & sticky on the back. Malt, berry, herbal, jam & coniferous tastes with a tangy berry finish. Tastes like a spicy Red Ale.
