33 cl bottle at Polar, Madrid (last bottle they had, don't know whether they'll get some more or not.) It pours lemon-hued with some greenish shades and virtually no head whatsoever. This is great fun in the nose, let me tell you. It first smells rather lambic-y and cider-like (spontaneous yeast, I presume), then you get your good share of Pediococcus, and along comes that fine Brett (mushrooms, soil) and a hint of emyreumatic rubber. Wow, this one requires a degree in microbiology and biochemistry to begin with. In the mouth it begins bone-dry and light-bodied, rather sour but very balanced as it moves through, leading to a much longer and bitterer swallow than forecasted by the previous steps. If you're a sucker for farmhouse ales, this is your baby.
