Description
XT Brewing Co is an innovative, independent brewery crafting a wide range of exceptional beers. Our XT beers form the core range of characterful, full flavoured brews and our wild side, Animal Brewing Co, pushes the boundaries with new and exciting one-off specials. The options are as infinite as the natural world.

We designed and installed our 18 barrel brewery during 2011 and brewed the first full scale gyle in November 2011. The equipment was custom built for us in Burton upon Trent.

The brewery is on the beautiful Notley Farm estate on the Oxfordshire Buckinghamshire borders, with far reaching views over the Chiltern hills. We are as eco-friendly and sustainable as possible; recycling nearly all our waste products and our spent raw materials go to local farmers to feed their cattle and pigs.

At Merton Winter Beer Festival 2018. Black dark cola coloured lasting tan head. Chocolate toffee brandy aroma. Sweet aroma. Oak woody. Warming aroma. I mean it'll get you drunk hides abv well. Barrel age character on aroma. Just about ok. Too much wood for me. Made me happy though.

On tap at Merton Beer Festival, Merton, Oxon, Friday 23rd 2018. Pours black with hardly any head at all. The aroma whilst present here is very much muted when compared to the sherry cask, you wonder if this cask has either been used a few times now or if it is just struggling to impose itself in the way that the sherry cask does. As I said with the other variant this is a Imperial Stout very much in the more traditional old style, it's big, ballsy, meaty and I get a beefyness about it the brandy notes are there but subdued. A little dark, bitter chocolate when I would crave a touch more sweetness it's fine but not totally my bag. As I said with the other sherry version if you go traditional then go more like Courage and Harveys who do it for me both offering a level of complexity and fruity tang to a big beast.A6 A4 T7 P3 Ov13 3.3

On tap at Merton Beer Festival, Merton, Oxon, Friday 23rd 2018 in the company of Ratebeerians Bobinlondon and Ryan. Pours black with a slim head that rapidly departed. Nice aroma the sherry really is shining through. This is an Imperial Stout very much in the more traditional old style, feels robust, meaty I get a little oxo or beef stock, the sherry present in the mouth as well. I would like a little more sweetness and perhaps more smooth chocolate, that's not too say that I didn't like it, because I do, however just wanted a more indulgent edge to this. If I like at the more traditional style Imperial Stouts/Porters then I would argue that Courage and Harveys do it for me both offering a level of complexity and tang to a big beast of a beer.A7 A4 T7 P3 Ov13 3.4
