De bieren worden gebrouwen in een moderne 25 Hl installatie in Erpe-Mere. Gelet op de sterk groeiende vraag en het plaatsgebrek op de huidige site werd de brouwerij voor verdere groei genoodzaakt uit te kijken naar een bijkomende locatie. Deze werd gevonden in de Industriezone AALST ZUID III, waar een bijzondere ruime productiehal werd aangekocht. Deze werd volledig gerenoveerd en uitgerust voor de verdere expansie van de brouwerij. Op deze site werden 6 gekoelde cylindroconische gistingstanks van 37 Hl/elk geïnstalleerd. Tegelijkertijd werd er een nieuwe Italiaans- Duitse afvullijn geplaatst voor 33 cl flesjes, en een ultramoderne hergistingskamer.
Ondanks alle investeringen in high-tech toestanden blijft de missie van de brouwerij ongewijzigd: op ambachtelijke wijze smaakvol natuurbier brouwen in een moderne installatie, met enkel de beste grondstoffen en zonder toevoeging van om het even welk kunstmatig additief!

75cl bottle from Abeervinum, Rimini, Italy. Pours intense gold, medium hazy, with fine white foam. Aroma is fruity, yeasty, herbal. Body is average, with good carbonation. Taste is medium-high, with quite a nice bitterness and spiciness. Final is average.

0.75 l bottle from 'Bierloods22', bottled in September 2020. Almost clear, very dark ruby with a large, foamy, stable, beige head. Sweetish-malty, gently fruity and a bit yeasty-spicy aroma of raisins, prunes, molasses and some clove. Gently sweet, malty, quite fruity and slightly yeasty-spicy taste of raisins, prunes, clove, some caramel and a touch of burnt sugar, followed by a short, moderately bitter, gently yeasty-spicy finish. Medium body, quite effervescent mouthfeel, average to lively carbonation. Pleasant beer, a genuinely Belgian-Style Scotch Ale with quite some yeasty notes, fits well into the winter season.

330ml bottle SophiesBeerStore.co.uk. Misty yellow appearance, large frothy white head. Good fragrant yeasty sweet not. Lovely creamy sweet triple character overall, light brioche notes with a nice balanced bitterness. Very good tripel.

750ml capped bottle, I couldn't find any date.
Pours a hazy orange gold with a large head of foam that shrnks slowly. Good lacing.
Smells of hay, candi sugar, citrus to grassy hops, fruity.
Taste is of biscuit, candi sugar, hay, some hop bitterness, earthy. A real mix of smells and flavours for a Tripel.
Medium body with lively carbonation.
Served on the cooler side but the flavours expand as it warms up. Alcohol is a non factor.

0.75 l mottle, foam goes over the place after opening. Smell- weak malt, weak acidic tones. Foam- thin, acidic, malt, Belgian yeast, some caramel. Medium-sized head, medium-dark brown color. Appearance- brewer bottle cap, bottle wrapped in paper. Cap is not re-sealable. Cloudy, dark brown color, not black, no carbonation. From - snifter Taste - weak malt, acidic tones, some Belgian yeast. Generally quite malty, bit acidic, and some alcohol backbone. Generally somewhat unimpressive, but not too bad.

0.75 bottle, not resealable. 2018 vintage. Smell- weak, bit to medium, malt, faint Belgian notes. Foam-thin, bitter, weak citrus, weak hops. Head is medium-sized but goes away fast. White-yellow-brown ish color. Appearance - brewer bottle cap, simple bottle wrapped in paper, I like the idea, but I will not give a bonus this time, make it a bit more interesting and you get a bonus. Medium dark, red-orange, tea color-ish From - snifter Taste - weak malt, faint roast, faint Belgian. Generally very malty, but nothing special.
