De meeste blended bieren worden gemaakt met een grote hoeveelheid spontaan wild bier van Brouwerij en Stekerij Vandenbroek. Dat bier wordt gebrouwen in koperen ketels, gekookt op houtvuur, gekoeld in een koelschip en vervolgens jarenlang vergist en gerijpt in houten vaten.
Interesting brew this. Indeed halfway between cider and natural wine, with some spontaneous funk. Dry, fruity, apple is light but does balance the wine flavour nicely. Light and subtle, maybe a tad too subtle for autumn.
Don't think I had cherry plums before, it's an interesting flavour. Fairly dry, super soft acidity, fruity yet dry. Very nice balance, but maybe not completely my fruit.
I think I tasted this when it was bottled, fun to see how it turned out. Very nicely! Plenty of grape, fairly dry, with the lambic giving a nice acidity and some sharpness. Funky. The elderflower providing very subtle nuance.

Opens with a loud poof. Pours a magnificent deep dark ruby, clear, with a small bit of light purple foam. Smells woody, vinous, red wine but also lambic funk, grape. Soft, well carbed, fairly sour but not sharp. Lots of grape, nice lambic funk. Awesome.
Hapu, vaarikas, kirss, veits šampoonine, suht happeline, kuiv. Ok.

Now this is interesting. Nicely dry, with a soft acidity and plenty of wood. All as expected. However, I'm getting loads of herbal flavours. Was the Tommie Sjef ale one of his sage beers, perhaps? Different, but it works quite well. Symbiose always nice.
