Description
Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions. In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction. The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States. On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

Aus der Flasche (bbe 28.02.2026) im 2024-07 getrunken. Dieses Kirsch/Rhabarber Sour Ale mit trüber, roter Farbe aus einem Italienischen Fass zeigt ein tolles Fruchtaroma mit deutliche Säure. Mit etwas mehr Raumtemperatur nimmt die Säure deutlich ab als es noch kalt war. Alles sehr gut balanciert und ein schöner Körper, so daß man feststellen muß hier wurde handwerklich hervoragend am Braukessel gearbeitet.

Lys gulbrun klar med hvitt skum. Lukter lyst brød, blomster og noe sitrus. Lett. Noe bitter. Smaker blomster, sitrusskall og urter. Middrls lang.

7-4-7-3-14 Bottle, #513, four months after bottling. Pours hazy yellow, with a big creamy head. Aroma is sweet malty notes of bread and honey, as well as floral hops with grass. Medium to full body, with soft carbonation. Flavour is zesty hops with grass, herbs and citrusy notes, as well as sweet malts with bread and honey.

Beautiful dark red body, with a big, pink head. Aroma of smooth cherries, moderate red apple, slight funk. Tastes quite similar, a bit lighter, with a bit more apple. Medium mouthfeel, with an average carbonation. Finishes smooth, medium dry, a bit leathery, very fruity, with cherry, apple. Lovely stuff. Pretty complex, with beautiful cherry notes, moderate funk and vinous notes. Score: 8 / 5 / 8 / 4 / 16

375 ml corked & caged bottle, from Vaaland, Bryne. ABV is 4.5%. Clear red colour, large but shortlived off-white to pink head. Aroma of lactic acid, rhubarb and morellos. Light bodied. Moderately sour flavour of rhubarb, morellos and lactic acid, slightly on the dry side. Refreshing.

375 ml corked & caged bottle, from Vaaland, Bryne. ABV is 4%. Beautiful deep wine red to purple colour, small and shortlived pink head. Aroma of red berries. Thin mouthfeel. Moderately sour flavour of all the red berry varieties that have been used here, fairly dry.

July 2021: 500 ml bottle, shared by my son. Beautiful signal red colour, moderate pink head. Cherries and vanilla is a combination which is easy to go wrong with, but Lindheim appears to have succeeded here - both aroma and flavour seems to be well balanced, not too sweet, not too sour, just pleasant to drink.

Draught@TCBW2023. Hazy red colour with a small pinkish head. Aroma is berries, cherries and some apple ciders with a slight hint of sea buckthorn. Flavour is sea buckthorn, some apples, mild wood, cherries and some slight oaky tones to it.

Draught@TCBW2023. Hazy orangeish golden colour with a small white head. Arom ais tartish sour with some nice green apple skins, red apples and some pear to it as well. Flavour is pretty similar with a nice wooden touch to it. Refreshing and pleasant to drink.
