Inside the barn, which was built in 1954, stands today a new microbrewery from Premier Stainless Systems. The brewery consists of a total of 11 tanks. A pot, a boiler, a hot water tank, six fermentation tanks and two clarification tanks. Four fermentation tanks hold 1150 liters and two hold approximately 2500 liters. Much of the beer is fermented in these tanks, under controlled conditions.
In the basement under the new part of the barn, beer is stored for oak barrels of different sizes. This basement was built in 2016 along with the new part of the barn. Today, there are about 130 oak barrels with both beer and cider for storage and concoction.
The barrels are used before for wine production, bourbon and rum. They come from different parts of Europe and the United States.
On the third floor of the barn is an open tub. In the autumn, when the weather is right, we brew beer that is spontaneously fermented with wild yeast from the air at Lindheim. The brewing process itself is different from our "regular" beers. We use a different type of malt, raw wheat, old hops and a different spoon method. After cooking, the wort is cooled in this open tub called a "coolship". Here, wild yeast is caught on the surface of the wort. When the herb is 18 degrees, it is transferred to used oak barrels for both fermentation and storage. This process can take several years. The magical air of Lindheim is full of mysterious microbes and yeasts that are suitable for creating something unique from our region.

Draught@TCBW2023. Hazy red colour with a mediumsized pinkish head. Aroma is raspberries, some redcurrant, mild grapes and some slight wooden tones. Flavour is raspberries, some slight funky and tart tones with mild wood and some slight acidity as well. Nicely balanced.

Deep Red color, small white head. smells berries, cherries, jammy, Marzipan, spices, lovely smell. full body, soft carbonation. tastes cherries, spices, Marzipan, raspberries. finishes dry and light to medium sour with notes of cherries, spices and cinnamon. Very nice smell, lovely

No head over ochre, almost clear beer. Wood, horseblanket, fruity esters, farmyard odours. Lemon, almost decaying pear, pineapple, farmyard. Lime retronasal, lactic acid. Acidburn and -thinning. Not very carbonated, long lasting flavours. Special. Love it.

Bottle, 75cl winecorked. A still, very lightly hazy golden colored cider/perry. Quite funky aroma, fruity, but in a more gentle way than for a regular cider. Guess the pears are responsible for this. Melon, green grapes, hints of gooseberry and some hints of grass, fresh hay and apple cores. Even the apple aroma is subdued. It's tart on the palate, medium bodied and more or less without carbonation. The flavor is quite acidic, lightly funky, with lemon and barnyard, some leather. Pear, apple and some grape and melon. Medium length finish. Lacks some body and most likely carbonation this one I think, but I like the aroma and flavor profile. 240705

500 ml bottle, from Vaaland, Bryne. ABV is 4.7%. Slightly hazy reddish brown colour, moderate head, slightly off-white. Aroma of dark fruits, burnt caramel, brown bread and earthy and piney hops. The flavour has the same elements. Good mouthfeel for its ABV, quite drinkable.
