About
Wilding Cider is made by Beccy & Sam Leach, of former restaurant fame with their wonderful Bristol restaurant Birch. We are orchard cider makers and farmers, based in Chew Magna, North Somerset. We grow mostly Somerset cider apple varieties in traditional orchards, managing them in a careful organic way.
After some years of hobby cider making we went full time in 2018 and scaled up production to 6,500 litres with fruit from our own 4.5 acre orchard and three other orchards around Somerset.
Fruit is picked from the ground in the old way, let mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
We mostly bottle cider in 75cl sparkling wine bottles and mature for at least a year before release.

Fra fat: uklar gylden uten skum. Søte epler, blomsterhonning, blomkarse og litt syre. Mild, snill og sjarmerende med trusefjernerpotensiale. Og det tredje nye bryggeriet her på The Cock Tavern.

750ml bottle. Hazy orange gold colour, bubbly head that quickly dissipates to a thin white rim and aroma of apple, fruit, funky. Taste is sweet, ripe appley, juicy, fruity, alittle core, with orchardy funk, and mellow tannin. Medium bodied, low soft carbonation, medium sweet tannic finish. Nicely drinkable.

750ml bottle pour at Obhal Cider Tasting, Custom House, Edinburgh 28Mar2026. Yellowy golden colour, short-lived bubbles on top and aroma of perry pear, funk. Taste is sweetish, perry peary, floral, funky notes, biscuity hint, with some tartness and tannin. Medium bodied, light carbonation, medium drying tart & tannic finish. Quite drinkable.
