Description
The abbey was established in 1831. Already in the early days beer was brewed in small quantities, not for sale but just for their own consumption. In May 1839, the Abbey received a brewer’s licence signed by king Leopold I on April 19, 1839. Most likely a first test brew was produced the same month. In June 1839 the first official brew was produced.

Around 1860 a vast complex of buildings for amongst others sheds, a guesthouse, barns and a second brewery, was built. It remained however a small domestic brewery for personal use. Only from 1878 on production increased due to a good turnover of the tavern ‘In de Vrede’. Between 1886 and 1896 a third brew house, fully operational as from 1896, was built.

On 20 March 1922 the monks started the expansion of the brewery. On 27 October 1927 for the first time steam was used to brew in the modernised, fourth brew house. This brew house was operational till 5 January 1990.

In 1976 a fermentation room with six open yeast vessels and a laboratory were installed. Fermentation in open yeast vessels, a method that is used very rarely, is essential for the ester profile of the Trappist Westvleteren.

The present brew house was officially put into operation in 1990. The new bottling plant was put into operation in 2013. Since 2014, two brews are made per brewing day. This meant a considerable saving in terms of energy consumption and man-hours.

The lagering cellar and the fermentation chamber were modernised and automated, but because the capacity did not change, production also remained unchanged. The production amounts to approximately 6,000 hectolitres annually, spread over 42 brewing days. In 2016 a new secondary fermentation unit with storage space was built.

And the next big thank you to Erzengel for this bottle. Again gushing reaction. BB 28.??.23 on the cap. Got lost 20% into the sink. Cloudy golden in the glass. Smooth grainy, low but present fruity on the nose. Grainy smell, caramel, increasing bitterness. Some apricot. Expected way more.

Trappist Westvleteren Bier Blond, Fläschchen aus Tausch mit Pivnizub - Dank in den Pott! - Orangegelb, trüb. - In der Nase recht süßes Malz mit Weizen, obergärige Hefe, ein wenig Kandis, reife Aprikose und subtile hopfenwürzige Herbe mit Tiefgang. - Antrunk satt hefig hellmalzig mit der für belgische Blonde typischen, etwas plumpen Malzsüße, hier aber konterkariert durch kräftige herb-fruchtige Züge, alten Hopfen und überhaupt deutliche Altersnoten (Pferdedecke?). Gut rezent. Im Abgang immer deutlicher werdene Hopfenbittere mit krautig-scharfen Zügen und ranzigen Altersnoten. - Mal ein leichteres Trappistenbier, aber nicht so einfach gestrickt wie viele Blonde sondern mit eigenwilligen Aromen und mit Tiefgang, aber auch irgendwie überaltert. 0,33 l bottle. Pours hazy orange brown with big, lasting tan head. Aroma of dark fruits, prunes, toasted malts, bread, slightly spicy and yeast, some caramel, alcohol. Taste is medium sweet, toasted malt, caramel, medium bitter. Body is full, carbonation average. Finish is long, starts fruity, as fruitiness fades toasted malt, spicy bitterness kicks in and lasts for a while. A bit of alcohol warmth too.

I finally had the pleasure to enjoy this incredible beer - and it was everything I was told it would be. Perfect Quad. Shared with closest family/friends - raisins/plum fruit - hangs on for a long time. Amazing.

Bottle found at small beer outlet in Denmark, stored in cellar for a couple of years. Mahogany colour with full head initially. Aroma of hazelnuts an dried fruits, also alcohol. Rich taste of dried plums and nuts, malt sweetness blended with medium bitterness. Alcohol almost hidden. Long aftertaste.

33 cl bottle at Madame Janette in Aruba. Mahogany brown pour. Small, creamy beige head. Wonderful sweet toasted malt aroma hints at dark dried fruit. Amazingly complex layers of flavor. Toasted malt, figs, caramel, black currants, toasted walnut and so much more. Absolutely exquisite. Subtle notes of warmth from the 10 ABV. More complex as the brew warms. Wow, what a beer.
