Description
Craft beer in its purest form is what Sebastian Sauer, the head behind Freigeist beer culture, produces. Sebastian is known among experts as one of the first craft beer brewers in Germany. True or not, he's a veteran in the craft beer scene and an expert who is second to none. It's not for nothing that his beers are more popular than any other German beer in the USA, the home of craft beer.

Free spirit beer culture is conquering the craft beer world with the salvation of old, long-forgotten beer styles. Sebastian reads himself into the matter until he has found out all the ingredients of the original recipe and the subtleties and secrets of the old brewing style. With this knowledge, he then ponders how the beer would be brewed these days and what ingredients would be used. He doesn't want to bring old camels out of grandma's handbag to the light of day, but rather to transport the beers of the past with skill and expertise into the present. His beers are therefore not just reproductions of old recipes, but rather modern new editions. With this concept, the brewery has made a good name for itself in the craft beer scene and attracted international attention.

Fabulous. Six years in oak! Definitely heavier than most Berliner Weisse, and lots of wood, bit of earthy spice, tons of yeast. Very bubbly. I brought this to share at the beer fest but we ended up being too drunk to remember opening it. For the best 😆

Thinnish bod, low carbo. High sour, mostly clean lacto, lemony feeling even. Little else honestly, a bit of lacto funk, moderately wheaty. Clean feeling though. Tasty, refreshing. Good.

Tastes sour grainy, yeasty, vinous, floral and smoky with umami mouthfeel and mild bitter finish. Medium body, slick texture and lively carbonation in palate. Tart refreshing maple juice…

Panda at home, thanks to the Graham Grumbo, 22/03/2026.
Murky brown topped with a tan cap that thins to the edge.
Nose is fruit cake mix, caramel, herb, hint of chocolate.
Taste comprises dried fruit rinds, lick of booze, spice, caramel, raw fruit.
Medium bodied with bite, fine carbonation, drying close with a spike of alcohol.
Okay sipper if a little raw and unrefined.

21/2/2026. Bottle at ITFC Beer share. Courtesy of Boris, cheers! Unenergetic pour. Toffee, bready, woody, touch meaty. Quite bitter initially. Good body. Lacked a bit of refinement.
