About
From the humble beginnings of our story in 2007, when Once Upon a Tree was born in the cold outbuildings at Dragon Orchard; we have evolved to multi award-winning craft drinks producer, BBC Radio 4 Food & Farming "Drinks Producer of the Year", Overall Champion Trophy at the International Cider & Perry Competition, and winner of the Bath & West Champion Perry Trophy.

We remain humble and true to our heritage and passion, which is to create the best quality cider from the highest quality fruit; whilst continuing to preserve the tradition of cider making in the area. Founder and wine maker Simon's appetite and knowledge to apply wine making principles to cider production has led to a profusion of creative and innovative products, from multi award winning Blenheim Superb ice cider, to grape skin co-ferments.

Box @ Fox & Goose, Hebden Bridge. Clear golden peach coloured cider. Has a sugary-sweet aroma, but a lot drier in taste. There’s a strength here but it’s light apple flavour remains dominant. Smooth in the palate.

Draught at the Cider Tap, Euston. Hazy gold colour, thin white head that dissipates away and aroma of tangy apple. Taste is tart fruity apple, with some citric sourness, melon notes and drying tannins. Light bodied, low carbonation, dry mellow tannic finish. Nicely drinkable.

Bottle from Three Counties Cider Shop, Ledbury, Herefordshire, consumed at Isobels, Eardisley, Herefordshire, Sunday 1st November 2015. Deep gold in colour, super clarity, very busy carbonation. In some respects this is not unlike the Olivers Gold Rush I had before, not from a flavour aspect, more so in the sense that the producer makes much better ciders. Tart in the mouth, it’s quite crisp, the appleyness is a bit thin, it’s dry it’s a bit watery, not really my thing. A6 A4 T5 P3 Ov11 2.9

Bottle from Middle Farm. It pours clear golden orange with good lacing on the glass. The nose is soft, juicy, sweet apple, spice, toasty sugar, golden syrup and fresh apple pie. The taste is crisp, juicy apple, light mouth-pucker, pleasant spicy aspect, apricot, dried mango, pear skin, apple pie, honey and light alcohol warmth with a lingering oily fruits. Medium-full body and slick, oily mouth-feel. Pretty frickin delicious. Nice tart edge to it. Crazy drinkable as well.
