Eight generations of brewers follow one another faithfully, each bringing their own touch of know-how and excellence. After 60 years of interruption, I take up the family torch with pride, and pay tribute to my grandfather and his intuition: the CÉLESTIN micro-brewery was born in 2014 in Old Lille.

Linked to almost 300 years of family brewing history, the Célestin brewery is known to be one of the region’s first micro-breweries to set up in an urban setting. It is in the heart of Old Lille that Amaury, descendant of a family of brewers, sets up his micro-brewery and a beer cellar.
Due to the success of the brewery, a second production site was opened in 2017 just outside the center of Lille.

Bottle from the brewery shop in Lille. New brewery for me. Hazy gold with a large white head. Bready and yeasty with banana, coriander seed, and a touch of orange. Sweetish up front with a spicy and slightly dry finish. A pretty average tripel. Fine.

Clear dark brown to black beer, small creamy dense beige head, pretty stable, a little adhesive. Aroma: nice, lots of chocolate, cocoa powder, some coffee, good roast, caramel notes, cassonade sugar, a hint of vanilla. MF: ok carbon, medium to full body. Taste: pretty sweet start, lots of chocolate, some caramel, vanilla, more chocolate, a bit acidic, good roast, some caramel. Aftertaste: malty, chocolate, a bit acidic, some vanilla, ripe banana, caramel, alcohol, ok.

Bière dégustée en fût de cognac et d’Armagnac. Robe noire profonde, mousse fine et fugace. Nez intense, mêlant cacao, vanille, boisé noble et une pointe d’alcool. En bouche, texture onctueuse, chaleur maîtrisée, arômes puissants de malt torréfié, de fruits secs et d’eau-de-vie. L’influence du fût se fait clairement sentir : notes de chêne, de raisin, de rancio délicat. Finale longue, chaleureuse et complexe. Une belle réussite, dense et raffinée.
