Description
After several years spent in the production of wines in various regions of France and the world, and a few beers made as an amateur in the family kitchen, during winemaking in 2006 in the United States Emmanuel Rey discovered the extent of the micro brewery phenomenon. in this country.

We are in December 2006. Everything is quickly linked: an internship at the Brasserie Sancerroise in July 2007 to discover “real size” brewing, a training course at the IFBM in Nancy and numerous tests in the family kitchen to highlight point the recipes. At the same time, the search for the place of installation was carried out with the help of the Regional Natural Park of the Haute Vallée de Chevreuse and a place was quickly found near the town of Bonnelles. The project is finally launched!

Tasting at Papsø’s
Cloudy blond color. Aroma of cereals and honey, sweet and quite pleasant. Very low carbonation (this beer would be better with some more), sweetish cereals flavor; correct bitterness, lightly fruity. Delicate beer, if it was not for the carbonation it would be quite good.

Tasting at Papsø
Hazy light amber color. Some aroma of cereals and yeast, vegetables and spices. Mild malt and cereals flavor, correct bitterness, but too much yeast and still some cabbage. Below average.

33 cL bottle. Pours hazy dark brown with a small tan head. Aroma is spiced and phenolic. Spiced, roasted malt and again rather phenolic base note. Lingering roasted malt finish. Bitter and dry far finish with a lasting spiced impression.
