Description
Matt Stephenson is a Sheffielder living in exile in North Somerset who, together with son-in-law Sean Beaton, got into cider making by accident, having set out originally to make wine. But they must have done something right because two blends from their first harvest in 2020 won gold in the 2022 prestigious Taste of the West awards and they have followed that up with two silvers in the 2023 awards. The name Wild West comes from the wild fermentation process, their base in the West Country - and it means they get to dress up as cowboys!

Here at Wild West Cider we strive to deliver unique and interesting flavours using the traditional methods of cider making. All our ciders use naturally occurring yeast to spur on the fermentation process producing a variety of delicious blends. Hand picked apples from local orchards is at the very essence of what we are believe in. Only the best make it through, which are then milled, pressed and left to do their thing in stainless steel tanks. With little to no intervention these blends are truly the real thing.

750ml bottle from Wild West. Orangey golden colour, white foam head and aroma of apple, fruit. Taste is sweetish, tart, appley, fleshy, stone fruits, with funk, some acidity and drying tannins. Medium bodied, light carbonation, drying acidic & tannic finish. Nicely drinkable.

440ml can from Wild West. Bright golden colour, bubbly white foam head that dissipates away and aroma of apple, fleshy fruit, funk. Taste is apple, fruity, orchard floor, with some horsey funk and drying tannins. Medium bodied, spritzy carbonation, dry leafy funky finish. Nicely drinkable.

Bottle from the brewer's own stall at the Birmingham NEC Good Food Show. Gold with a slight haze and a too-aggressive fizz. Sour from the off - under-ripe apples, white wine vinegar and (oddly) lime. There's some sweetness in there, as well as a slight dry floral note in the finish, but it didn't seem to come together for me. A disappointment compared to the other two ciders we tried from this producer.

Bottle from the brewer's own stall at the Birmingham NEC Good Food Show. Another interesting brew from these guys. It's a murky deep yellow colour with no fizz. It's quite fruity up front, with melon and green grapes leading into bright fresh apple, leading into a drier, woody finish. Nice!

Bottle from the brewer's own stall at the Birmingham NEC Good Food Show. Murky gingery orange colour, no fizz. Dusty leather, apple skins, dryish, a touch of wood. I always find it more difficult to nail down the flavours on ciders than beers, but this was an interesting one; I enjoyed it.

750ml bottle from Wild West. Hazed orangey gold colour, white foam head that dissipates to a thin rim and aroma of mucky funk, apple, juicy fruit. Taste is sweet, appley, fruity, farmhouse funky, with orchard floor, muck hint, leathery notes, and bittersweet tannins. Medium bodied, light carbonation, dry tangy tannic finish. Nicely drinkable.

Taste is sweet, ripe appley, flowery, juicy fruity, wood, with some acidic tartness, funk hint, and drying bittersweet tannins. Medium bodied, light carbonation, dry tannic finish. Nicely drinkable.
