Gezien bier brouwen steeds energie vraagt van de aarde willen wij zo ecologisch mogelijk werken. Dit beleid voeren we door in ons brouwproces, maar ook in de oorsprong van onze ingrediënten. De brouwerij heeft als doel een off-grid brouwerij te zijn.

Onze eigenzinnigheid weerspiegelt zich in onze bieren. We brouwen met gezuiverd regenwater, gebruiken biologische en circulaire grondstoffen zoals oud brood, wagen ons aan een laag-alcoholische pils en gerijpt bier op bordeaux vaten. Bier met inhoud.

One of the latest beers by Wilde Brouwers near Ghent, an organic pale lager (with Certisys logo) below the average ABV - so a 'session lager', in a sense. Old school 'export' bottle (33 cl) from an organic food store in Ghent, stumbled upon this by coincidence and strangely - despite living in Ghent - haven't encountered it anywhere else so far. Very thick, egg-white, very dense and mousy, paper-lacing, very regular head towering over a lightly hazy, ochre-ish straw blonde beer, shifting to a cloudy, deeper 'dirty'-peachy blonde with sediment. Aroma of moist old bread, sourdough even, pumice, potato juice, field flowers (camomile), grass, cooked turnip, dry earth, vague unripe pear, hard green banana, minerals, clay, sourish old sweat-like note, light background DMS (sulfuric cooked vegetables). Spritzy onset, very vividly carbonated, very minerally (bit calcium-like even) and notably souring, with very light fruity notes (green banana, unripe pear), doughy malt body, cereally with a sourish edge, quite 'fluffy' thanks to being unfiltered, bready, with the yeast adding some extra breadiness in the finish, where minerally side flavours linger alongside an indeed floral, if otherwise unconspicuous and bit hayish hop bitterness. This hoppiness lasts medium long, quite pleasant really, with traces of breadiness accompanying it. Some vague off-flavours here and there - possibly related to this bottle not having been stored properly as well - but otherwise a fine, rounded, bready and sufficiently hoppy pale lager; the organic aspect is a plus for people interested in this concept, but more interestingly for the beer geek, is the fact that the yeast that has remained inside, adds a 'fluffy' breadiness and extra flavours in a way similar to German Kellerbier, albeit less refined and a bit more roughly so. Still, a very decent alternative to bland, filtered and pasteurized industrial pale lager, that much is certain. Reminds me a bit of that Picus pilsener I encountered at the Bourgoyen last summer (Ghent's natural reserve).

Sampled at Zythos Beer Festival 2018. Bright amber color tan head with solid lacing. Aroma of burnt caramel and butterscotch. Taste is tart toasted caramel with a bitter finish

New Belgian amber beer by this ambitious Ghentian brewing project, sampled at Goeste; apparently made in collaboration with a bakery and brewed with remains of organic bread. Thin, bit loosely bound, moussy, fizzy, yellowish off-white, opening head on a lightly hazy, coppery amber coloured beer. Aroma of candied orange peel, soggy peanuts, sweetbread, red apple, dried strawberry, candied fig, brown bread crust, gingerbread, coriander seed. Rather 'cleanly' fruity onset, sweetish with ripe pear and red apple notes, dried banana and fig, sourish side note, medium carb, slick and bit resinous mouthfeel. Minerally side effects accompany a smooth, nutty and caramelly malt sweetish backbone with mildly toasty bitterish edges; ends with an earthy, bit leafy hop bitter note and spicy, coriander-ish notes, a bit earthy in the end with lingering residual sweetness, though not too cloying. Not an unpleasant amber beer at all, in any case surpassing the quality levels of their previous beers in my opinion in the absence of sulfuric off-flavours, but a tad too sweet - could do with less residual sugariness and perhaps a somewhat more confident toasted bitterness.

Sampled at zbf 2018. Thnx for sharing, everyone! Pours unclear, darker amber. Small white head. Smell is mild coffee like, tad tart even. Taste is sharp. Yeasty. Sweet, malty (pale malts) OK.

28/04/2018 – 10cl glass shared with an international ratebeer crew @ZBF2018 Brown colour. Nose is malts, bit nuts, herbal. Taste is bit sweet malty, caramel, bread, nice moufhfeel. Nice aftertaste. Interesting.

Bottle. Clear amber color with white head. Aroma is herbal, chocolate, liquorice, phenolic. Taste is sweet, liquorice, herbal. Silky mouthfeel with medium carbonation. Ok.

Sample at ZBF 2018, thanks Belgian RB table. Ambrée, col beige. Arôme au bouquet malté, sucre caramel en rétro avec qcq notes épicées arrivant en rétro-nasal. Palais est malté, cara pâle voire munich, légère pointe d'alcool, petite note épicée sur la fin. Houblonné reste noble, le côté malté biol ajoute un effet biscuité modéré qui tranche avec l'amertume de la fin.

Light brown colour with a fluffy head. Aroma and flavour have some sweet malts with light toasting and a little caramel. Nice flavour but too gassy.
