Description
Our current kit can produce up to 20 brewer’s barrels, depending on the beer and how heavily hopped it is. We have 10 fermentation vessels, with the most recent additions being oversized to allow double brews of our more popular beers. Having started as a one-man operation, the business has slowly expanded to the current team of eight as demand, production, brew house and premises size have increased.
We put a premium on quality and consistency, which means monitoring the beer at every stage of the brewing process and beyond. Much of our equipment, i.e. our keg washing & filling machine and our bottling machine, were chosen with this in mind.

Cask-conditioned at the Cornubia, Bristol 23/07/2011. Amber coloured with a decent, off-white head. Aroma of cereal malts, some hedgerow fruit and a touch of grassy hop. Flavour began with a touch of sweetness, before some solid malts and big, lingering, bitter finish. Good.

Cask-conditioned at the Three Tuns, Bristol 22/07/2011. Clear gold with no head. Light, bready malt aroma with some grassy hops. Easy drinking, with some solid malts, touch of fruit and bitter, slightly prickly finish. Fine.

Cask at GBBF 2010. A hazy yellow beer with a thin white head. The aroma has notes of citrusy hops. The flavor is sweet with notes of citrusy fruits as well as lighter notes of malt and flowers.

Cask at GBBF 2010. A dark red-brown beer with a thin tan head. The aroma has strong notes of roasted malt, as well as medium notes of soy sauce and oats. The flavor is sweet wtih notes of caramel, malt, soy sauce, and oats, leading to a very roasted finish.

Cask-conditioned at the Three Tuns, Bristol where this was a festival special. Chestnut brown with a decent, off-white head. Massive, herbal hop aroma, no doubt influenced by use of a ’Randall’ with some slightly roast, sweetish malts. Flavour dominated by more green hops, a touch of roastiness with some pine, leading to a bone dry finish. A brute, but pleasant nonetheless.

Cask-conditioned at the Three Tuns, Bristol 23/06/2011. Pale amber with a tight white head that left rings down the glass. Big grapefruit hop aroma. Flavour had tropical fruit, some balancing sweet malts and a huge, bitter finish. Very hoppy.

Cask-conditioned and enjoyed while listening to the heavy metal at the Gryphon, Bristol 15/06/2011. Jet black in colour with a decent tan head. Contrasting aroma of dark chocolate, charcoal, lime and orange blossoms. Flavour began with stout attributes of more plain chocolate and black coffee before hoppy notes of citrus, pine and grapefruit, with some roastiness in the finish. Full bodied and excellent.

On keg at the Three tuns, Bristol 16/06/2011. Golden with moderate carbonation. Aroma of weetabix, with a touch of sweetness and grassy hops. Flavour had some chewy, savoury malts upfront, followed by a lingering, bitter finish. Unusual.
