SHIRE Brewing è un progetto che prende vita nel corso di una lunga storia che si cela dietro i pentoloni casalinghi. Dal 2017 cinque ragazzi, che ben presto diventano due, Mirko e Gianluigi, nel piccolo paesino di montagna di 200 anime Porciano (The Shire) sognano e sperimentano qualunque tipo di idea su un piccolo impianto homebrewing da 50lt a nome "Castrum Porciani Brewing". Nel corso degli anni, le esperienze divengono numerose, Mirko partecipa ad un corso intensivo di KPU Brewing and Brewery Operations a Vancouver ed un paio di esperienze in birrifici laziali (tra cui il romano Rebel's). Nel 2020 si intensificano le sperimentazioni casalinghe no-stop, incentrate su un' idea di produzione studiata al dettaglio. Nel 2021, i due ragazzi ricevono un'importante convocazione a partecipare alla creazione di un progetto all'interno di Birrificio Oxiana. Prende vita SHIRE Brewing, un percorso birrario che incentra la sua filosofia in produzioni old school anglosassoni e germaniche, che non si farà mancare l'uso di nuove tecniche di luppolatura.

Cask @Luppolo Station (Rome). Dorata, mediamente torbida, schiuma bianca media, discretamente persistente. Al naso note di malto, biscotto, leggero erbaceo e citrico. In bocca è bilanciata, con amaro medio, fresca e pulita. Corpo leggero, carbonazione soft. Non male, ma non lascia il segno.

On tap @Buskers Pub (Rome). Ambrata carica, mediamente torbida, schiuma bianca media, discretamente persistente. Al naso leggero affumicato, caramello, note erbacee. In bocca è perfettamente bilanciata, con un attacco abboccato, una chiusura leggermente amara a bilanciarla e un affumicato leggero. Corpo medio-leggero, carbonazione media. Birra di splendida fattura, equilibrio e pulizia, e si beve anche facile. Complimenti!

Dark amber to the lightest red, quite hazy, especially per style. Medium sized white head, showing good enough retention and lacing. Average intensity in the aroma with a base of slightly bready caramel malts, an averagely strong, relatively unusual smoked profile (smoked cheese, ashes/campfire), the slightest floral hops hint. Clean. Nicely clean and well defined in taste too, with average flavour intensity as the smell suggested. Caramel malty base with a light bready suggestion, bringing a bit of sweet base. A quite interesting smoked notes profile with smoked cheese (scamorza) most noticeable, some woody/campfire, slightly pungent smokiness, very light smoked ham (speck). A floral hops background, mostly felt in finish/aftertaste, mild but probably more noticeable than usual for the style. Overall medium to low sweetness and medium to low bitterness, very good balance, semi-dry clean finish. Light to slightly above light in body, light to medium delicate carbonation, quite smooth. Good stuff.

Dark brown with a tan head. Toasted malts, dry coffee, sweet cream, light chocolate. It’s full of roasted coffee notes but it somehow stays light unlike many coffee beers. Medium bodied. No heavy finish but it stays lighter making it one of the most drinkable coffee beers I’ve had. Really nice.

Pours mid amber (pretty much on the dark side for the style) with some haziness. Medium sized white head, good enough retention and a bit of lacing. Not much intensity in a clean, simple aroma: bready, slightly biscuity notes, maybe the slightest hint of nuttiness, a touch of honey. Taste notes as per aroma, mainly malty as the smell suggested though with a plus of gentle earthy hoppiness. Slightly sweet in the mouth with a pleasant hint of warmth, excellent balance in a perfectly clean finish/aftertaste. Light to medium bodied, delicate carbonation; feels super easy to drink but also gives a light, comforting warming sensation. Overall a relatively simple but very well made beer. Not especially rich or intense, but balance, refinement and delicacy are top notch.
